I love working at my bakery! We ship out to markets so most of the tasks are big batches that you get to do for 4-5 hours straight before moving on to smaller tasks

sooo um here’s an idea, if it’s really time consuming to make the macarons, why don’t you sell them on one or two days in the week, say tuesday and friday. this way it will be an exclusive item on your list which will create a sense of excitement in your customers because you can’t get it everyday which will obviously cause you a lot less burden. i don’t know how practical it would be considering i don’t own a bakery but its just an idea.
There’s an ice cream by my place that rotates flavours weekly. That creates a hype and people buy all the time even in winter because they’re afraid to miss their favourite flavour rotation. I think it’s a great business move for macarons as well!

It would be less time consuming if your employees piped the filling. You should only do work that you are trained for. Your arms will thank you lateron.
I suggest having all halves flipped upside down and then using the side with cream on them to pick up the empty half. That way you can skip having to flip half of them by hand on each tray and you can flip the whole tray over
Macarons take so much time and skill to make! I feel like that's one of the reasons they often are so expensive for their size. I have yet to find a macaron cookie that is worth it.

I "made" them for the first time today and it was a flop. The batter wouldn't come to the desired texture so I kept mixing it until I realised I overmixed it. It still rose up and weren't hollow or anything but they spread quite a bit
I've made about 200 macarons at once and it took forever. I only have a single stand mixer, not even a big one, I could only bake a single half tray in my oven at a time. For 400 shells, I was there all day, mixing, piping, resting, and baking.
So satisfying to see so many laid out and perfect piping! You must have tired hands after making 1000 of those bad boys!
yeah it's a carpel tunnel dream haha.... hopefully a piping machine is on the cards this year
