I tried the store bought marinades and never got these results. I tried Keith's jerk marinade and it made all the difference. I followed your advice about prepping and cooking on a charcoal grill with the wood chips and it was the best I had ever made the jerk chicken! You rock!
thanks so much for stopping by! for oven cooking, I would roast it in the oven on a rack, at 450 degrees so that the skin gets nice and crispy :-)I would also take some of the meat drippings afterward and cook it down afterwards with a little bit more of the jerk paste for dipping :-D

right on the money you are the only person who do it the right way you must use the wood if it is jerk...love you for getting it the right way...
This is brilliant. I'm gonna do this this weekend. Get it ready on saturday afternoon and let it marinate for 24-26 hours for sunday late afternoon.

A better substitute than habaneros would be devil's tongue, but they're harder to find than the scotch bonnets.
