    I tried this recipe and I have to say Keith knows what he's talking about.From the marinade, to butterflying the chicken and finally the added layer of seasoned smoke. I tried the store bought marinades and never got these results. I tried Keith's jerk marinade and it made all the difference. My friends and family raved about it and needless to say I'm going to cook some more.
    Keith..your culinary technique and methods are sound and I look forward to watching some more of your cooking videos.Thanks.

    I followed your advice about prepping and cooking on a charcoal grill with the wood chips and it was the best I had ever made the jerk chicken! You rock!

    thanks so much for stopping by! for oven cooking, I would roast it in the oven on a rack, at 450 degrees so that the skin gets nice and crispy :-)I would also take some of the meat drippings afterward and cook it down afterwards with a little bit more of the jerk paste for dipping :-D

    This is brilliant. I'm gonna do this this weekend. Get it ready on saturday afternoon and let it marinate for 24-26 hours for sunday late afternoon.

    Dammit I am in love!! This recipe is way better than the one I am use to or I should say use to use. I love this, because it is allll fresh everything. Nothing like something from scratch. You go on, and keep cooking stressfree.

    I have to be honest I have never ever tried jerk chicken before......next week its ON!!!!! I have your jerk chicken seasoning however that poultry seasoning is the truth in fact I need some more and will order again from you really soon. LOVE IT!!!!!

    I didn't see or hear you mentioned about cleaning the chicken thoroughly. I'm referring to removing the excess fat and entrails. That aside, you're on the ball with the jerk method.

    Great tip with the smoking packet. Why didn't I think of that - lol. I cheated and used Walkerwood seasoning though. I'll try it from scratch when I can get my hands on SBP's.

    Yes finally someone who knows the difference between scotch bonnets and habaneros lol I even seen Jamaicans on youtube that think they are they same bonnets taste way better

      A better substitute than habaneros would be devil's tongue, but they're harder to find than the scotch bonnets.

    Hi Keith, well i just discovered you today, I was looking at another video and came across you. I had to check out your channel. So I am Jamaican and made jerk chicken before but i bought the seasoning except or the scallions and onion and peppers. I will definitely have to use your ingredients for sure next time. You have my mouth running. Where did you learn how to cook like that? I will be stalking your channels. Take care.

      thanks for the love my friend! i come from a long succession of spice merchants and chefs and the gift was inherited lol. then traveled the world and went to culinary school, and my life revolves around making spices and making perfect flavors. its my only hobbie. im obsessed lol im not good at anything else lol

    Hello...love your channel. I noticed most recipes for jerk chicken adds some type of brown sugar. Is this something that isn't necessary or is it already added in your jerk seasonings? Thanks for your help.

    Keith keith keith. boy are you in trouble. I tried this recipe and it was like i was in montego bay at scotchies or some shit! Im not jamaican but baby my best friend is and i let her mom from Kingston taste your recipe and she said that jamaican soul recipes of this caliber are not to be shared for mass consumption LOL I assured her you meant no harm.
