The BEST Japanese Curry and Rice (Vermont Curry Recipe) | OCHIKERON | Create Eat Happy :)

- Curry rice (curry and rice / kare-raisu) is a very popular dish in Japan. According to the statistics, we Japanese eat curry rice twice a month!!!
Today, I will show you how to make basic curry rice. More curry rice recipes are coming, so don't miss them and I hope you enjoy!

Curry Rice (Vermont Curry)
Difficulty: Easy
Time: 30min
Number of servings: 6
Ingredients:
1/2 box = 119g (4.2oz.) House Vermont Curry Sauce Mix (Med Hot) *we call it "curry roux". you can choose mild or hot as well.
250g (8.8oz.) meat *chicken, pork, beef, etc...
2 medium (400g=14.1oz.) onions
1&1/2 medium (225g=7.9oz.) potatoes
1/2 medium (100g=3.5oz.) carrot
850ml water
1 tbsp. cooking oil or butter
6 servings cooked rice
Directions:
1. Cut meat of your choice into bite-size pieces. Cut the onions into bite-size pieces. Cut the potatoes and the carrot into bite-size pieces.
2. Heat the cooking oil in a large stew pot. Add onions, carrots, and potatoes, and stir-fry them until slightly coated with oil. Add meat and cook until no longer pink.
3. Add 850ml water, bring to a boil, remove the foam, and turn the heat down to low and cook for about 15 minutes.
4.Turn off the heat, break up the curry roux into the pot, and mix well until completely melted. *make sure you stop the heat when you add the curry roux, otherwise it won't blend well.
5. Then put on the heat and simmer for about 10 minutes until it thickens.
6. Serve curry on a hot bed of rice.
*for best results, don't use a lid while cooking.
*curry and rice is best eaten on the day it's made but if you have any leftover, store it in the fridge and finish it on the next day, but it is not recommended.
*if you have leftover curry roux, wrap in a plastic wrap and store it in the fridge and use within a week.

I tried making this once and for the first time in my life..my dad (who's a chelf), praised me! He said that it tasted better than he expected (since all the other dishes I tried to make I had to throw it out) and he even asked for second! I've never been more proud of myself T^T

I recommend to mince unions and fry up until their color change to yellow ocher. (1:57)
That adds the sweetness of curry.
And I suggest everyone cooking Japanese curry to fry up minced garlic after onions.
That adds the curry flavor.
Almost homemade Japanese curries are made up like this.

My mom's coworker just bought us two boxes of mild vermont curry and we were a little confused by the instructions (they say to use one box of the sauce mix, we didn't know if it meant one of the little prepackaged boxes inside, or the entire box) but your video is nice and easy to follow! I had curry rice for dinner tonight! Honestly, it's one of my new favorite things. Easy to make, super cheap (one onion, one potato, and some chicken, plus carrots) and it tastes great! I made it on a whim about a month ago, and I have made it almost once a week since.
How many blocks would you use if using just one veggie each? I just wanna make enough for myself too!
Its been six years but we still need to know how many blocks you use..

I usually start, if I'm making it just for me, with two. Let that dissolve, and then I add more. I usually cook for me and my wife (oh how things have changed lol) and I use a full block (so four pieces) in a pot.
I always come back to this video when I forget how to cook curry.

I saw this video and decided to give this curry a try. I didn't use Vermont because the only flavor available was this honey apple flavor and I really wanted basic spicy curry. So I used Golden Curry instead. Anyway, I really enjoyed this recipe! It's really simple and easy for me to make (it took only less than 30 minutes even with prep time.) And it's so nice to eat it for lunch! Thanks so much!

yes, you'll be fine without adding onions, although at someone who grew up hating onions... they get soft, and you can't really 'taste' the onion itself, sort of blends in. So I put them in and it's fine. You can always chop them smaller as well, they become mostly invisible.
You could also add in peas, garbanzo beans, lentils, corn, etc.

I hope you know that I tried this for the very first time in my life when I was 30 years old. My brother in law made it for me with lots of wild mushrooms, tofu, and soy curls. He added apple as the special ingredient. My husband added the caramelized onion. We haven't stopped making Japanese curry!! I thought Indian curry would be my favorite, but they're both amazing!!

I've had this many times. I recently used this curry (minus the meat, just vegetables only) to put in meat pies. It was delicious-- Japanese curry meat pies. I will be making these for work and selling them in the bakery. I like mild.

I have made this dish many times with different kind kinds of meat and different vegies. Once, I used sweet potatoes instead of regular. It was not bad! Curry rice is one of my favorite dishes on a cold day!

We make Japanese curry a lot. My Japanese mom when she came for a visit would grate apple into the curry same time she added the rue. It was delicious. Glad to see you can still get Vermont curry. We can only get S&B brand here lately.

I'm making this tonight but I'm going to use deep friend; crumbed chicken because where I lived in Australia (in Brisbane) there was a Japanese take away shop and they made the best Chicken Curry Rice and this is how I love to eat it. Hopefully mine will turn out great :)
