Dal Tadka
Total - ½ cup Dal for 4 servings.
Ingredients:
1/4 cup masoor dal / dehusked brown lentils
1/8 cup moong dal / skinned, split green gram
1/8 cup tuvar / arhar dal / pigeon pea lentils
You can use any combination amount ratio
Water - to wash, soak, and cook
Haldi - ½ tsp
Salt - 1 tsp
Ghee - 2-3 tbsp
Oil - 0.5 - 1 tbsp
Jeera - 1 tsp
Hing / Asafoetida - ¼ tsp
Dried Red Chilli - 4
Curry leafs - 1 sprig
Ginger - 1 ½ inch
Garlic - 5- 8 cloves
Onion - 1 small, finely chopped
Tomato - 1 small, finely chopped
Green chili - 2
Haldi - a dash
Red Chilli Powder - 1 tsp
Dhaniya powder - 1 tsp
Kasuri methi - ½ tsp
Salt - to season
Coriander Leafs - 1 tbsp
Butter - 1 tbsp

This recipe is very healthy when cooked with just a spoon of oil fat or butter with less onions to fry plus other ingredients, for 1 person. A dash of butter enhances the flavor, but optional. Adding a little more onion and fry it in a little more fat is not totally unhealthy for active folks, but not good for those with sedentary life. So an excellent recipe heart, body, mind and soul! Go light on chillies, you bet!

Dal is very healthy and rich in vegetable protein. Ghee is very very good for the body. Go verify.

Just made this recipe. This is the perfect recipe of dal tadka i have ever tried. You are right, 'smoking the dal with charcoal is not the secret everytime'. Must try
"keeping the water aside for plants"...great tip!.. here's one tip..adding a little oil to the dal in the cooker before cooking will prevent the overflow during the whistle..the jeera ballooning tip is awesome 👌🙏

Hello fellow Seattlite! Indian food is probably my second favorite food (I cant deny thai food!) but sometimes I prefer the more filling Indian foods. Thai food is delicious but it's not that filling, everything is pretty light since they tend to eat a litte rich, powerfully flavored foods like curried fish paste or larb with alot of white rice and I always wind up feeling hungry not long after. I grew up eating my Norwegian grandmothers cooking, alot of beef, alot of pasta, alot of dairy (cream, cheese, and butter) and alot of potatoes so I'm used to heavy filling "stick to your ribs" food and Indian foods like this always feel more filling even if they're not as heavy or fattening, and even when they are rich like this it's still super healthy.

I'm trying to have zero waste attitude, I've been watching tons of videos on that subject and still noone else gave me that idea. Apparently you can also reuse cooking water (starchy things for instance). Just make sure it's cooled down and not salted!

Oz4Ever you can use salted water too from boiling pasta. It’s good for making soups, gravy etc.
This one I knew! Actually any starchy water can do the trick. It's used in many italian sauces. There are so many of these tricks that our grandparents knew but were lost because of industrial cooking (at least here in France)... Such a waste of actual knowledge. :(

Been eating ghee and only ghee coconut oil and gingilly oil (1:1:1) since my birth. So did my parents and grandparents and theirs. All of them lived more than 100 years productively.

Absolutely right. Safola, dalda and other oils are nonsense. We should all use desi ghee and White butter (homemade) regularly.
@@samuraijack1371 true but there has to be a link. Always heard from my 70 years old mother that back in the days, before her time, it was common, at least in Gujarat, india to offer bowl of ghee to a guest instead of Chai/Coffee. Maybe the life wasnt that sedentary. I love ghee though.

I’m very thankful for all chef shared here. All the comments about plant water! You people. Anyway. I’ve been cooking Dal for a year or two now. I just did my own thing for a while. But I started to watch some videos with mostly Indian mothers cooking their family recipes. And I learned a lot. But this video is the best! I’m a bit of a chef/foodie, and all my friends love to come over for Dal. This video is going to go a long way in both technique and understanding! I’m sure I’ll be able to do it just fine, and I’ll begin to create variations from all that I’ve learned. Thanks again, so much!
This guy is very good at what he cooks and explains it very well, he seems to show signs that he is well trained by his mother because his cooking technique is very traditional and old fashion so I like his videos, he also does not make you sleep with over explaining and reapting naratives over and over again, like most shefs do!!!! keep it up brother, you're very good.

I made this today, it was good but as someone who doesn’t cook with ghee ever I found it really strong. Also you add some butter, so basically it’s just very buttery and kind of sweet. I prefer my dal more savory and more presence from the spices. I’ll make this again but with much less ghee (1tbsp) and maybe no butter. I’ll increase the cumin seeds a bit because those were delicious. Also half a cup of dal roughly fed two adults for me so if you want leftovers (dal reheats SO well), maybe make a cup.

This is a great recipe. I’ve adapted it to use a food processor for the ingredients that are added after the cumin seeds. This takes the pressure off being so quick with all the following ingredients. I also made it without the dried red chillies tonight and it was still spicy enough for me.

For a healthy option, I make mine without butter, ghee, and use just a splash of olive oil.
It's almost as good, but I then add some coconut cream or coconut yogurt. Not much, 100ml, ¼cup, rounded tablespoonful approx.
It snaps the dish perfectly. Spicy, creamy, healthy deliciousness
Rice + Dal tadkha + Potato fry is heavenly combo 😋😍

Hi, I hope you are well. I want to make this recipe on a larger scale, i.e. for 2 cups of dal. Since you have made this several times I am assuming you would know how to do that. I am guessing that multiplying every ingredient by 4 times wouldn't be the right way to go, or would it be? That's what I am not sure of and needed some clarification. I would be grateful if you could advise me on this. Thank you.

In majority of restaurant they use chana dal and tur dal mix instead of only tur dal , moong dal and masoor dal, I guess chana dal dal fry is much tastier than any other dal. ...but chana dal is hard to digest
