Just one small change I'm going to use. Taking it from a recipe, my mother baked every Christmas. Five minutes before it's supposed to be done, take it out of the oven and brush the top with melted butter and sprinkle cinnamon sugar on the top. Put back in the oven for the last five minutes. It melts, the sugar, and makes the top almost like cinnamon toast. The recipe looks delicious. Love your videos. You always look like you are having so much fun. The eggshell is just a bonus, right?

Personally, I prefer the sheets of parchment over a roll of parchment. It is much easier to manipulate into the pans.
