Sorry, I'm not sure what you mean by sewing them in strips on one side only. Do you mean by sewing one on top of each to make a strip, then sewing the two sides (left & right) continuously?

Joining hexagons is a bit more tricky than joining squares, I would first sew them in strips on one side only, then sew the strips together in one go for each side.

Do you tie the ends together? How do you keep it from coming apart?
You weave in the ends , that stops it from unravelling

So after joining one hexagon, pull, then cut off yarn? Can I continue on to make several or not a good idea?
