I'm gonna use this tutorial to make the first quesadillas in my entire 52 years of living. I've been cooking about 40 years. Very rarely make Mexican (or southwestern) food. But tonight, I am. Yippee!
The only Quesadilla I ever ate was from TacoBell and never had the desire to make them. I just did, I made mine with Chuckeye leftovers. I couldn't believe how delicious it was.

I took my chance tonight. They came out good. Thank you for being a cooking inspiration for me. My first and 4th try on making quesadillas were my best tries. Tonight was my 4th try.

Practice makes perfect! I always set my stove top to 5 until my pan gets hot, then I lower it to a 3 or 4 low heat so my tortilla gets toasty then I add cheese and meats..once cheese is melted I then flip over..Once you get comfortable, get creative with them. You can add anything you want including eggs, cheese and bacon. Breakfast Quesadilla's with salsa is amazing!

I know that you showed the "traditional" way of making quesadillas, and that is how I made them up until the last time, about 2 weeks ago. This last time I tried baking instead of frying and was surprised how good they came out. I lined a baking sheet with foil and sprayed it with some cooking spray. I placed each open tortilla on the baking sheet, filled it with the fillings (in my case I just made cream cheese and shredded cheddar), folded them, then baked the whole sheet pan (3 quesadillas) at about 400°F (204°C) for 10 minutes. The cheese came out much more consistently melted and the outsides were crispy, almost like the fried ones.

I ❤ making Quesadilla's using honey ham & shredded Mexican blend cheese and i use Zaxby's zax sauce for my dipping or ranch sauce..It's very yummy! Sometimes, I'll make a few of them using chicken and mixed shredded cheeses, and I dip it in mild salsa! I always add cheese to the whole Quesadilla... I like to toast up both sides b4 adding the cheese and any other meats! Who doesn't love Quesadilla's! The possibilities are endless!! If you can make homemade tortillas from scratch 😋 they will be even better!

I make mine with 2 tortillas. One on the bottom, add all ingredients over the whole tortilla, then top with the 2nd tortilla. Flip the whole tortilla over to brown, and I cut them into quarters with a pizza cutter.
