There are a lot of different versions of the show that have come out since the og, and each one takes the lore in slightly different directions. my personal favorite is mystery incorporated, its the most appealing to me as an adult as it still has that charming silliness, but it does get serious and follow a real plot. in that show, daph has a crush on fred pretty much the whole time, and fred doesn't get the hint until like halfway through. velma also likes shaggy at some point and they try their hand at dating, but they realize they're better as friends. and i like that version, its a little more complex and makes the audience think a little harder about genuine connections, compatibility, etc.
Your versions could still be a couple. Fred isn’t canonically gay, that was a scrapped version of that movie that didn’t go through. He and Daphne are together in those movies
