    Hi Ah Pa. thanks for a great recipe. Next time I won’t caramelised the pork because it makes the meat really tough. Tried it twice. Family love the taste.

    Just drop some course sugar in a wok, on low fire. Allow the sugar to melt without disturbing it. Once melted, it will start to caremalize beautifully

    Hi! Ah Pa can use castor or coarse sugar or not instead of rock sugar as these are more readily available. 😄

    If you can crash the rock sugar cubes, you would find it easier to caramelise it.

    All you need to do is :
    A cup water in a clean wok;
    Put in the small rock sugar;
    Fry into it melt into a sugary brown sweet solution;
    Then add you porky...
    I saw you did WITHOUT WATER...
    it is wrong step
    I m sure you are NOT A TEOCHEW...
