Jeff, those turkey legs looked awesome. At one point this year I was experimenting with turkey legs, trying to get a perfect smoked turkey leg recipe for my church and got pretty close to what I was looking for and then got extremely busy with life and stuff happening. I am definitely going to try this recipe and I am pretty sure that it will be a winner. I have not been able to watch hardly any UA-cam videos from anyone in many months but I just looked over your list of videos that I haven't seen yet and after Thanksgiving I am going to spend a day catching up watching your videos, man they looked awesome and I can't wait to see every one of them and take notes. Your subscriber count should be close to 100K. Your videos are very good. Keep up the good work. I have many new products coming out after the first of the year. I will email you about them soon. As usual, those turkey legs looked great. I cheat and dry brine. I guess I need to jump in all the way. The taste test looked like those were delicious bites. Tip: go wash your hand you had the ghost pepper sauce on. If you forget, well you know what comes next. lol Either the eye will ich, or you'll need to go to the king's palace. Then you're done. lol

Yup
I'm hesitant to say "cured", cause after 24 hours it is not cured like bacon, but definitely gives it flavor and color.
