I honestly consider lost legends to be canon to the series. Not only does it not contradict the series much at all, but it also expands on some character development. I think that the don't dimension it story is a nice way to wrap up Mabel's story arc after weirdmageddon. Lost legends even further supports a relationship between Dipper and Pacifica, which is always a plus.
Given that these are mainly from Shmebulock's pov and he's portrayed as a mirror to a gravity falls (show) fanatic, I think a lot of the weird characterization (like you point out with Mabel's Fault) or pure contradictions could be explained away in-world as Shmebulock inserting his own little fanfic bits in there
I’m assuming “canon-ish” means Level 2 Canon. So if theres a certain discrepancy between the show and a story, you can safely assume the story is just non-canon.
I think Mabel getting pulled into a rift portal in the woods was supposed to happen when Stan opened the basement portal but they had to change it due to the seasons 2 and 3 merger.

I will insist 'til the day I die that Dipper is not that kind of person! I have in fact headcanoned for years that Mabel blames herself for Weirdmageddon and has a lot of guilt and shame she tries to stifle. And (importantly) that the rest of her family DO NOT BLAME HER.

And, most of all, look me in the eye and tell me honestly that you were any more mature, generous, or wise of a person when _you_ were thirteen years old.

I think the reason why the creator didn’t want to say whether it is canon or not is because: 1) maybe it’s because if the story will ever expand on it it’s easier to write off the canonicity of the entire franchise if ever they decided to go off in another direction 2) maybe they just want to keep the feel of the gravity falls mystery, so it’s more fun to have the readers to just enjoy the story and not stress whether it’ll be canon or not 3) maybe he only wrote this for fun, and not really plan to making a full creation out of it, it’s just to give fans something of the story and not wanting make a full blown thing out of it Anyway, it’s just my thoughts

Cannonish I believe to mean like when a legend gets old certain details are accidentally changed with every retelling so this story's are almost exactly what happened but accidentally slightly different

I always took it as Canon. It added to the show and didn't contradict it. When I do a Gravity Falls rewatch I includ it with Journal 3
