But I have found myself wasting my seeds/nuts because I had no idea how to store them properly (for example poppy seeds, flax seeds, almonds, etc). Hi there! They help thicken the oats, as chia forms a gel when soaked. And they add omega-3 fatty acids :) They aren't essential though. I often make overnight oats simply with plant milk and plant yogurt and it's still great!

Really great ideas here! But after trying all the recipes, I was surprised to find that the nutritional yeast caused me to have a headache! I looked it up, and apparently this is common. Just adding this as a warning; I may try a more high-end brand, or just use it more sparingly in the future.
