I have been a meat and potato man since I was a young boy until I saw you cooking crawfish Etouffee. It looked interesting, so I followed your directions and made it with shrimp. I invited some friends to eat with us. They told me to keep making it every week until the fishmonger ran out of shrimp. They also invited themselves in advance. Thank you for the recipe.

Roux, like Kangaroo. You can add lots of flavors to a roux. I make a Champagne sauce that works well with Turkey. I am expecting some classier aprons, might even buy one.

Great meal ,,,however now don’t feel sorry for me cause I have an excuse,,old hillbilly,,and from the mountains of North Carolina,,I’ve never eaten garlic or crawfish,,so we will try Jim’s recipe with shrimp and no garlic , and a quart of homegrown canned tomatoes instead of the soup ,, and I bet we love it.

I love it but have to disagree with one thing!!! It absolutely has to be cooked in cast iron!! It makes it taste better and as an old cowboy chuckwagon cook it's the only thing I use.😁
I'd do that with shrimp in a heartbeat (maybe minus a bunch of the green pepper........it doesn't like me very much). Have you ever had hamburger veggie soup? Brown up some burger, add a jug of V8 juice, and your choice of veggies. Simmer that for a little while and serve it up. It's great with some homemade bread. This was a fun vid. Keep 'em coming.

Male peppers have 3 bumps and female peppers have 4 bumps. Female peppers are full of seeds but are sweeter and better for eating raw. Males are better for cooking.
