The biggest benefit and issue I learned in flight school with canards is exactly what was shown in video They are insanely hard to stall And they have a tendency to oversteer *really hard* during a sharp turn

While the canard variant has the main lift behind the center of mass; but as someone else commented the canards should only be for pitch not roll.
the reson why the classic plane was fliping in the speed test is because all the new thrust was closer to the bottom of the plane, so it made the plane aim up + the extra lift made the plane flip
After finishing the Stranded Campaign, I was determined to build a canard airplane with hopes of using it for multiplayer racing. I used 12 Power Cores for 4 Dragon Jet engines. It weighs 174kg/79lbs (which makes no sense to me). I experienced the snap upswing that you did when climbing. Although I couldn't relieve all of it, I eventually got it pretty minimal. I have a Flap Wing on each side but with added ailerons, complimentary elevators (reversed pivoting) for the rear main wing and forward canard. I originally used the Elevator Tail (as I think you did) for the canard, but I changed it out for Small Elevator Fins, which lessened the "pull-up spaz". My plane reaches 612 kph/380 mph with 12 Power Cores, which I hope is pretty fast, and turns very tightly. Of course, being a canard, it's virtually impossible to stall. My conventional aircraft are mostly more stable, but this one really performs. I'm pleased with it.
I liked the Canard more... I wonder how the Canard woulda fared if its up and down fins on its end had contained Yaw Fins...? Edit: Also gets me curious how a Canard style Spaceship would fare if it attempted to build as a Spaceship with Atmo Flight Capability on the side...?
canarde planes in rl use the wings for vertical stability and lift, but trailmakers is unable to understand that, that's why canarde planes fly worse in trailmakers
It's the difference between turning with your front wheels (canard, most cars) and turning with back wheels (traditional planes, pallet drivers) Turning with back wheels will give you more control, but it's unintuitive.
If you have more lift it’ll work better at slow speed so this doesn’t go for every plane as I have very stable Eurofighter typhoons etc and they work much better at high speed but if you have less lift in them then they don’t work well at low speed at all. My point is is that these planes have the same wing shape whereas you can make all kinds of shapes and amount of wing pieces. Trailmakers allows you to do some very whacky stuff with the forces so all planes can be made stable, take for example planes that are made to be asymmetrical but work well

Fun fact, you use the rear ailerons on the main wing of a canard to roll. Not the front foreplanes , that probably causeed the roll instability.
