ULTIMATE MEAL PREP + Kroger Grocery Haul (prepping nutritious snacks, breakfast, lunch and dinner!)

Today I’m sharing a major meal prep that I pulled together to set us up for success for the week. I’m also including a Kroger grocery haul and I’ll share some of the Kroger deals I scored.
These recipes were really easy to put together. I’m a busy mom of three kids so I know how important it is to have quick and easy recipes that are nutritious and delicious. I tried to focus on making high protein choices during this meal prep but we mostly just try to eat a balanced diet, we don’t follow a specific nutrition plan.

RECIPES:
High Protein Pasta Salad
Zesty Italian packet x2
1/4 cup water
1/2 cup white vinegar
1 cup avocado oil
1/2 red bell pepper, diced
1/2 red onion, diced
1/2 cucumber, diced
2 cloves garlic minced
1 cups brocolli florets, finely chopped
1 cup cherry tomatoes, halved
4oz salami, cut into strips
4oz pepperoni, cut into strips
8 oz. Banza pasta, cooked per package directions
4 oz Asiago cheese, grated (or Parmesan)
Mozzarella pearls
1 cup cottage cheese
salt and pepper to taste
In a mixing bowl, combine zesty Italian packets, water, white vinegar and avocado oil. Add in remaining ingredients and toss together. This yielded 8 servings for us!
Crockpot Char siu pork
1 lb ground pork
1/2 red onion, diced
1/2 bell pepper, diced
3 cloves garlic, minced
2c Shredded carrots
3c Bok choy, chopped
1/3 cup hoisin
1/3 cup soy
1/3 cup honey
1/3 cup brown sugar
1/3 cup rice wine vinegar
1 tbsp oyster sauce
1 tbsp toasted sesame oil
2 tsp Chinese five spice
1/2 tsp ground ginger
In a crockpot, place pork, onion, bell pepper and garlic. Cook on high for 2 hours until pork is browned. Drain grease and add in remaining ingredients. Cook on low for 2 hours and serve over rice.
Breakfast quesadillas
1 lb ground pork
1/4 cup maple syrup
1 tbsp cinnamon
1 tsp paprika
1 tsp seasoning blend (I used 21 seasoning salute)
1/4 cup diced onion
1/4 cup diced pepper
Low carb tortilla
6 eggs
1/4 cup milk
2 tbsp butter
1/2 cup shredded cheese
2oz cream cheese, softened
In a medium skillet on medium heat, brown pork until fully cooked. Add in maple syrup, cinnamon, paprika, seasoning blend of your choice, onion and bell pepper. Allow to cook 5-7 minutes until onions are translucent. Set aside.
Cook eggs with milk and butter as desired. I used a mini pancake maker to make egg patties but you could also scramble them or make a fried egg instead.
Take tortillas and spread a little cream cheese on half. Lay down egg, then sausage, then sprinkle with cheese. Fold in half, spray each side with cooking spray and bake in air fryer at 400 degrees for 3 minutes per side.
Honey Lime Chicken Tenderloin
(I doubled this recipe in the video)
2lb chicken tenderloins
Zest & Juice of 1 lime
1/4 cup avocado oil
1/2 cup barbecue sauce (I used Kinder’s)
Salt & Pepper
1 tbsp taco seasoning or similar
3 cloves garlic
1/4 cup diced onion
1/4 cup diced bell pepper
Preheat oven to 375 degrees. In a mixing bowl or cup, combine lime zest and juice, avocado oil, barbecue sauce, salt, pepper, seasoning and garlic. Place chicken tenderloin on sheet pan with silicone mat or parchment paper. Bake for 20-25 minutes or until internal temperature of largest tender is 165°F.
