Spelt Flour Crackers! Amazing taste and more healthy than store -bought!

  • I have been making my own crackers for a while now and usually use bread or wheat flour. Well, here is a totally different level of a cracker: made with ancient spelt flour.
    Spelt is an ancient wheat grains grown in their original most natural form and has been cultivated since biblical times.
    Spelt, also known as hulled wheat is not a gluten_free grain but with much lower percentage. It contains 35g of whole grains per serving. Spelt was an important staple food in parts of Europe from the Bronze Age to Medieval times and has pleasant nutty taste.
    You can use this simple recipe to try making crackers using different types of flour. Just remember that you might need less or more, depending on a type.
    SPELT FLOUR CRACKERS
    1½ cups/250g Spelt flour
    ½ cup/125ml water
    1 tsp baking powder
    2 tbsp Olive oil
    ¼ tsp salt(optional)(salt added here just for a taste)
    For toppings on crackers:
    I used:
    Sesame seeds
    Maldon salt flakes
    Olive oil
    dry herbs: rosemary, oregano ,thyme
    (It has the look of something valuable and hard-won, a delicacy that has crossed deserts on camels. It works best as a finishing salt-one sprinkles it on vegetables, butter, caramel, or grilled meat, just before serving. As for the taste, Maldon is considered less bitter, less salty than other salts.

    METHOD:
    Combine Spelt flour and baking soda and mix.
    In a mixing cup, combine: water, salt and olive oil.
    Pour wet ingredients over dry ingredients and form a dough.
    Wrap in plastic wrap and refrigerate for 1 hour.
    Take out and cut into 12 pieces.
    Farm balls and cover with plastic.
    Work with two pieces at a time.
    Place baking stone in the oven a preheat to 425°F(220°C).
    Roll out each piece of dough very thin, so, when places on your hand, can see you hand. Apply toppings and poke with toothpick.
    Place on parchment paper.
    drop on hot stone and bake for 6-8 minutes until crispy and slightly browned.
    Continue with the rest same way.

    These look lovely, do you have to use a baking stone or will they work on a baking tray?
