If you have kumquats, wash them, make a slit about a third deep so the oil can get in. Soak in vinegar overnight, then drain and dry (not in sunshine). Cook you oil and then let it cool. Once your kumquats are dry, put back into a dish, add pickle masala, add salt if the pickle masala doesn't have salt, add a small amount of sugar, crushed garlic, pure chillie powder and then add part of the oil and stir through. Let it stand after mixing and then place into container. Top the oil up until kumquats are covered. You can also add green chillies to the pickle. You will have to adjust quantities according to how much kumquats you get.

Hi Rosy I wrote out the recipe becasue I'm not sure when we will get green pawpaw again: I had one large green paw paw - I peeled and removed the seeds and cubed into about 1cm cubes. Then soak in tap water for about 2 to 3 hours to draw out the "milk" from the paw paw. Then drain thoroughly and soak in vinegar (enough to cover all the paw paw) overnight The next day drain and then let it dry (not in the sun) In the mean time boil about 1 1/2 cup oil and then let it cool completely. To the dry paw paw add 2 tbs pickle masala, 1 tsp pure chillie powder, 1 tsp salt (but if the pickle masala has salt adjust accordingly), about 12 cloves whole garlic, 2 cloves, 1/2 tsp sugar and mix it all up. Then add cooled oil to the mixture. For about the first 24 hours keep out of the fridge and mix every so often. On the second day you can store in air tight container and put in the fridge.

Yes that's definitely adjustable to your own preferences. For the vegetable pickle we only soak in vinegar and we don't steam the vegetables. For chillies pickle we do a quick cook. Let me know if you'd like the chilies pickle recipe.

Hi yes, mutton goola or Amathungulu in Zulu grows along the east coast of South Africa. We must try to get our hands on some, there isn't a formal cultivation and trade in the fruit. You have to almost find the plants and pick the fruit yourself.

Can I use raw oil in mango pickle. As you do with vegi one. I got a few mangos . I will like to try to soak pickle. Please advise. As we always cook our oil and allow it to cool completely but I see you say it won't keep vegis crisp. So need to know if I must use cold uncooked oil for mangoes too.

I made Jalapeño , its very easy but depends on the " heat " u prefer .
However it is very yummy! steamed or not?

Either way works. If you leave the mango pickle to rest in the sun or a warm place the uncooked oil will also slowly "cook" as the pickle soaks.
