- Meatloaf gets a bad rap. Sure, you probably don't have the fondest memories of the room temperature cafeteria loaf you were forced to choke down in grade school, but when meatloaf is done right, it's the ultimate comfort food.
But like a lot of home-cooked favorites, it's all about getting the process right. After all, you don't want an overly dry loaf, or one without a nice crispy crust. So how does an aspiring home cook avoid these pitfalls and produce a meatloaf that would make grandma proud? It's easier than you might think, if you know what to avoid. Here's the biggest meatloaf mistake you're making.

Y’all think way too much. I made my first meatloaf yesterday and I forgot I made it as eating it. Doing leftovers now. After listening to this I’m gonna do it my way. Without thinking this much. Good luck y’all

Something my Mum told me was don't over-handle the meat mixture before putting it into the pan (or *onto*, if that's your style). I have found that "letting it rest" does let the juices return to the meatloaf. (Learned on accident, when I was behind in getting all the rest of the dishes ready)
I make my family's recipe that we've made since the late 1800's. My Grandpa & then, my Dad owned a Men's Only bar/cafe, beginning in the early 1900's, but it had been a bar/saloon way back into the 1800's. They served food, of course. There was a small lunch counter or 6 seats. The favorite hot food from there was the meatloaf, for both it's flavor & texture. When you sliced it, it was nearly as smooth inside as a would a thick slice of bologna. The was maybe one of the first "secret sauces" ever used. It was a certain brand of ketchup & some simple seasoning, salt, pepper, finely ground oregano & sweet basil, a dash of rosemary & a tad of onion & garlic powder. Nothing really fancy, but way back when they didn't get much flavor filled food. Some clay workers, but the bulk worked for the railroads. Can't get the ketchup anymore, but the rest is the same.
I find to keep it moist I sauté a lot of veg like spinach, mushoom zuchinni or carrots. Then I add ricotta in the middle like twinkie....

As a chef I understand about letting your meat resting it is so true
So what's the best topping to put on a meatloaf tomato sauce or ketchup.

BBQ sauce !
Whatever you use, mix it with some brown sugar, vinegar, and spices.
I use a mixture of 3 parts ketchup to 1 part sriracha applied at the last 15 minutes baking. Makes a nice, tasty, spicy glaze.
Cheddar cheese.
A good meatloaf is good at room temperature, particularly in a meatloaf sandwich!
The biggest mistake is inviting your in-laws over for dinner and your meatloaf is better than her mom's and they let her know.

Not a big fan but if I eat meatloaf it can't have ketchup anywhere. I don't like my meat sweet. Brown gravy or nothing.

Meatloaf is great when, when you know who to cook it,the right way.
I rather eat the raw meat and dip myself in phosphorus and go near a stove setting me on fire for a bit and cooking the meat which comes out the rear end as a loaf.
