You don't need to pedal from a dead start if you learn to slip your clutch just right. Also, it would be best to hold the clutch when rolling your bike downhill. You might score the cylinder and piston.

You build them, find a bike you like that will fit a motor, motors cost anywhere from 80-500 dollars, I build most of mine for 200, you can buy slap on kits like the phatmoto for 700ish though, look up motorized bike on amazon and that will get you in the right direction, or the bikeberry/gas bike websites
Depends on how steep, slight to medium inclines and they can mostly make it up unassisted, steep inclines and you'll have to help out the motor by peddling, you can also by a larger rear sprocket for the back like a 56 tooth to give you more low end power, most kits come stock with a 44 tooth, good news is you can peddle while the motor is running so even if you find a bad hill helping the motor by pedaling won't feel bad at all since the motor is still doing alot of the work, also most stocks kits go 20-30 mph with 25 being a good average!

Yeah
Yes, 2 strokes will get very hot if you dont hold the clutch while slowing down because it sends less fuel to the cylinder which means less oil
