I've been looking for a miso soup recipe with noodles. Thanks so much! Too many "miso soup" recipes on UA-cam aren't real miso soup and don't even use dashi. My favorite miso paste is dashi miso paste because it makes it super quick
I just tried this and it is super good. The squash is so good. I love that you do not have to peel the squash and the squash skin is actually really good once cooked. It has a nutty flavor which goes well with the miso. I do not have a chinese cabbage but I used some purple bok choy which goes well too. Love it, thanks for sharing.
Thank you very much for recreating it!! i'm so glad you like it!! I kind like the skin of squash also especially when it's cooked down in this recipe!! bok choy is a another great sub!! I'll try that!
Appreciate this simple vegan meal ❤️ I've been needing something different to my meals i had this week. Seeing I had most ingredients it was a calming experience.
Love the recipes, so comforting and delicious. Really getting to appreciate the wonders of japanese cuisine in a much deeper way. Keep it up, can't get enough, specially vegan recipes😋
this is a great healthy soup thats really easy to make. Ive made it a few times now, I put some grilled salmon or prawns on the side, makes for a good meal.
I have made the soup, very tasty and comforting here in cold Europe weather. I have used sweet potato instead of squash and different mushrooms, but it was delicious. Arigato gozaimasu for the recipe!
This also looks wonderful! Pumpkin seems to be good idea as ingredients. Also love the idea of individual claypot since it gives extra emotion. Thank you for sharing.
Thank you very much!! I love the way of how you express clay pot as the extra emotion!! It is indeed!! you comment made me feel like incorporating more of it into my cooking life!
Miwa San...Finally! I am able to catch up on your videos. This looks so delicious, I want to make it for dinner tonight. Thank you always for your great, healthy ideas. おいしそう!😋
Hi Michelle! Thank you very much!! please be generous on the amount of squash! the more you have, the better it tastes( in my opinion haha). So happy to talk to you!!
I'm really enjoying watching your vegan Japanese meal ideas. I especially the quick and easy ones. Which part of the store can I find the kombu powder? I live in Japan. Is it okay to use the liquid combo dashi instead?
Hello Miwa-san. This recipe looks delicious and I can almost taste it while watching this video. I will definitely give this a try and there is an Asian market called T & T not far from me where I can buy all the ingredients.....but I always have miso paste in my fridge as it’s a staple ingredient. Thank you and take care 😊🇨🇦

Thank you very much Anna! yes! Sweet potato will be a great substitution! Make sure to cook it off until it becomes super soft😍!! Do you have frozen udon noodle available there?
I've seen frozen udon at the local Asian store, but I have some dry ones at home :) The only thing I can't find is the kabocha, I've been looking for it all autumn, and none of the shops have it near me. I'd probably need to be in a bigger city for that...
@@Morzsi89 Thank you for sharing Anna! It helps me a lot to create the recipes! I want to use something many of you are available especially at this situation! If the sweet potato is not sweet enough, try adding some Mirin( Sweetened rice wine). This will enhance the flavor too!
Thanks for the tip! I like these substitutions, for example when I was cooking for someone who wasn't keen on dashi, I just used normal vegetable or chicken stock. :) What I'm struggling with is that the sauces I make seem to taste very similar, with a combination of mirin/sugar + rice wine + soy sauce + sesame oil... Somehow I always end up with the same flavour...
@@Morzsi89 I love your creativity! Sesame oil is very potent. so maybe you wanna start adding little by little! OR just swap for other type of oil you like! I'm always looking for different type of oil to make sauces and dressings!
I know the dish but have never tried it, never seen it with kabocha though. I love udon and kabocha but I'm not really a soup person. I like it a as side dish but not really as a main. :)
@@MiwasJapaneseCooking I make the nikomi udon usually without the miso and add chicken, spinach, egg, leeks and if I can abura age. It's very filling this way so small side dishes like tsukemono or another vegetable dish is usually enough. My daughter loves potage as well so it's often on the menu. I made spinach potage just a couple of days ago.

How long is miso paste good for?
I would say a month in a freezer once you open it!
Eating udon every dinner is healthy?
I don't recommend eating everyday... everything should be in moderation?? just my opinion though^^
