    I've been looking for a miso soup recipe with noodles. Thanks so much! Too many "miso soup" recipes on UA-cam aren't real miso soup and don't even use dashi. My favorite miso paste is dashi miso paste because it makes it super quick

    I just tried this and it is super good. The squash is so good. I love that you do not have to peel the squash and the squash skin is actually really good once cooked. It has a nutty flavor which goes well with the miso. I do not have a chinese cabbage but I used some purple bok choy which goes well too. Love it, thanks for sharing.

    this is a great healthy soup thats really easy to make. Ive made it a few times now, I put some grilled salmon or prawns on the side, makes for a good meal.

    I have made the soup, very tasty and comforting here in cold Europe weather. I have used sweet potato instead of squash and different mushrooms, but it was delicious. Arigato gozaimasu for the recipe!

    I'm really enjoying watching your vegan Japanese meal ideas. I especially the quick and easy ones.
    Which part of the store can I find the kombu powder? I live in Japan. Is it okay to use the liquid combo dashi instead?

      you can absolutely use liquid one! you can usually find the one in the same section as bonito flakes are.

    Hello Miwa-san. This recipe looks delicious and I can almost taste it while watching this video. I will definitely give this a try and there is an Asian market called T & T not far from me where I can buy all the ingredients.....but I always have miso paste in my fridge as it’s a staple ingredient.       I've seen frozen udon at the local Asian store, but I have some dry ones at home :) The only thing I can't find is the kabocha, I've been looking for it all autumn, and none of the shops have it near me. I'd probably need to be in a bigger city for that...

      If the sweet potato is not sweet enough, try adding some Mirin( Sweetened rice wine). This will enhance the flavor too!

      Thanks for the tip! I like these substitutions, for example when I was cooking for someone who wasn't keen on dashi, I just used normal vegetable or chicken stock. :)
      What I'm struggling with is that the sauces I make seem to taste very similar, with a combination of mirin/sugar + rice wine + soy sauce + sesame oil... Somehow I always end up with the same flavour...

      Sesame oil is very potent. so maybe you wanna start adding little by little! OR just swap for other type of oil you like! I'm always looking for different type of oil to make sauces and dressings!

    I always made Miso soup with just tofu and green onions. Now I a make it with all the vegetables, my husband loves it better.

    For some reason I never liked udon noodles. Something about the texture or thickness. Is there another noodle that would go well in this soup?

      I would say ramen noodle would be great! anything cringle soups would be good!

    I know the dish but have never tried it, never seen it with kabocha though. I love udon and kabocha but I'm not really a soup person. I like it a as side dish but not really as a main. :)

      @@MiwasJapaneseCooking I make the nikomi udon usually without the miso and add chicken, spinach, egg, leeks and if I can abura age. It's very filling this way so small side dishes like tsukemono or another vegetable dish is usually enough. My daughter loves potage as well so it's often on the menu. I made spinach potage just a couple of days ago.

    This was actually insightful! I've been trying to search for an instructional vid similar to yours that really explains the stuff in this UA-cam video! 👏 That idea at 1:25 is my fav.
