The entire point of our fasting is that it severely restricts what we eat, thereby making us focus on God more and making a sacrifice to God. I lost 5kg (around 11lbs) last Great Lent, which was a vegan diet with no oil. Veganism as a permanent diet is not very healthy to the body, which is why Orthodox monks tend to be very thin.

God gave us animals to eat.
Protein does convert to energy so does b12, an animal hormone, being vegan is not healthy, fasting has some benefits but we do it to give to God.
