East coast chanterelles & hedgehog mushrooms that stain orange!

  • Wild mushrooms often change colors when damaged. In the Southeastern US, summer edibles like velvety chanterelles (Cantharellus velutinus) and hedgehog mushrooms in the Hydnum genus can stain brown and orange, sometimes leading to confusion and consternation when one's golden-peach and creamy-colored mushrooms darken and discolor hours after harvesting.

    I just picked a few pounds of chanterelles yesterday and had them for dinner last night. I found one about 2½ inches across. Very strange.
