I've always preferred underground hangi but living in Australia has limited us to resort in that method or similar. Cabbage is a good substitute to keep the meat moist. One thing I did notice is that there was no salt to season the meat and veges. One of the most important ingredient to a delicious hangi. other than that she looked good
