  • I bought a lot of myoga because it was cheap and put a lot of it on soba noodles.

    All you have to do is to cut a lot of myoga! You don't even need a frying pan!

          Ingredients (for 1 person)
    1 serving (140g) raw buckwheat noodles
    4-5 myoga (Japanese ginger)
    1 1/2 tablespoons dried baby sardines
    1 teaspoon olive oil
    1 teaspoon white wine vinegar
    A dash of white sesame seeds
    Dried bonito flakes to taste
    Soba-tsuyu (soba sauce) to taste

    Soba-Soup can be made from any commercially available sauce. Straight type or concentrated type, whatever you like is fine.
    Directions
    Cut myoga into thin strips, soak in water for 30 seconds and drain.
    Put myoga, olive oil, white wine vinegar, and baby sardines in a bowl and mix well.
    Boil the soba noodles, remove any slime from the water, and then cover with ice water and place in a bowl.
    Top the soba noodles with the myoga mixture, white sesame seeds, dried bonito flakes, and soba-tsuyu (buckwheat sauce).
