      Try selecting the model and in the inspector, change the shader settings. If that does not work, you need to edit the shader itself or maybe try another one that fits your project.

    Compared to a lot of free toon shaders, this one might be the ugliest. This is not at all a Breath of the Wild shader, it's not even a Gamecube Wind Waker cel-shading.
    When imported in my project, it just looks like a kid have colored my game with cheep pencils. White highlights can't be colored, reduced, increased it just like Unity have spilled white painting on all my models... You can only disable it, and if you do, your material will be so dull that you'll think it has died!..
    - A really too simple shadow system, your models will be all dark, or all lighted, contraste are never clear and you can't choose the velocity of effects properly.
    - The glow effect, wtf? It's all cuted in lines to simulate "metal"? I didn't know that metal was shining with lines... Can't you have developped options to reduce or colored this white grim instead of changing things we can't even see? Like the Backlight Amount, that.. doesn't change anything on none of my models.
    - No outline, which would have been really better as all colors are so damn ugly after applying this shader. We even lose visibility after applying it.
    That's the first time EVER that I comment on a UA-cam video related to Unity to say that the render is horrible.
    Maybe I missed it all, maybe I'm just dumb, but I need to retag all my Material Shaders because my game turned into an alpha version of Viewtiful Joe on DS... Outline-Free..
    I spent 3 hours on your shader, trying to make my materials look something great...
    WTF? How can the result can be this far from what you are showing on your video?
    If you want to use that shader, considere not to use it for your objects, buildings, nature, etc... Only for your characters.
    Sorry if I'm rude, but I really feel disappointed.
