I recently bought a cheap grapnel anchor for my inflatable. Haven't tried it out yet. Most of this area has rock or gravel bottom - mud or sand is much less common - at least in the ocean, which is where I tend to use my boat. Once I try it - I'll fill you in on how much of a disaster it was!
My idea of a great anchor would be a casting rod and lure. One cast, and it's permanently hung up somewhere, and I'm stuck there until I cut the line. Boy, oh boy . . . The great adventures I must be missing, not owning a boat or casting rod!
I know people who made boat anchors for their skiffs used in the bay. They bent rebar into a half circle and poured cement into the opening of a cinderblock and inserted the rebar. The rebar was bent at the ends to keep it from pulling out easily. Most people aren't out in stormy weather and sometimes something like that is all you need.

Great video Robb. When I was young and poor, we used to fish in an old sheet metal john boat on a lazy, muddy river. We made our anchor out of an old coffee can. We tied the rope to a short piece of rebar, put it in the bottom of the can and filled it up with quikcrete. For teenage fishing purposes, it worked fine.
I see the second anchor a lot on commercial fishing boats now, they seem good for most bottoms.

I once caught a boat - while fishing from a trestle. Had to cut the line - as the boat was oblivious to having been 'caught'.

I used a starter motor from a Dodge V8.
When I got rid of the boat,my buddy wanted it.

I have seen a few people make anchors on UA-cam and they were pretty interesting.
Get a multi-purpose anchor that you can also use to bonk an alligator on the noggin to scare it away!
