Mixture of salt and sugar is a heterogeneous mixture as we can separate salt and sugar through physical method of hand picking aur we can use some other methods too for separating them. Also the particles in heterogeneous mixture are not a uniformly mixed with each other they do not have a uniform composition as that in the case of homogenous mixture.

Because oil have less wieght than water you can also say that the density of oil is less than water

Yes, adding more water will decrease the amount of oil in the emulsion. However, you can still make an oil in water emulsion.
