It's called Palm Wine over here in Nigeria and has been regularly distilled for centuries into local gin across the West African subregion with names like kaikai, ogogoro, akpeteshi etc depending on the locality. You should try it with bush honey some day

Toddy is tapped in many countries and has different names. It has to be drunk fresh every day as exposure to air makes it go off. This man earns every penny he gets from this dangerous job. Coconut bark is rough. The people who climb the trees are used to walking barefoot which toughens the soles.

here in the Philippines we call it "tuba" when it is colored in red. the coloring they used is from a bark of a tree. when it is dried it turns out into a red color. mostly people here enjoyed drinking tuba rather than any other alcohol. it's a big demand here. if that luquid is not mix with the bark it's used as a organic vinegar after a months of storing.

In the provinces of Batangas and Quezon we called it Lambanog Same ingredients and most likely same process. Also, available in other provinces of The Philippines where the precious ingredient Coconut Tree is abundant.

This is also called tuba in the Philippines. If it is exposed in the sun during fermentation it will become sour and it will be called vinegar. If the mixture is different it is called lambanog.
