Creamed Spinach
Unsalted butter
Chopped yellow onion
Salt
Black pepper
Cayenne Pepper
Fresh baby spinach
Garlic
Block of Cream cheese
Grated parmesan cheese
1. In a Dutch oven, melt butter.
2. Add onion, salt, pepper and cayenne (optional).
3. Add spinach in handfuls; cook until wilted
4. Add garlic
5. Add cream cheese and continue cooking until melted.
6. Add parmesan cheese; stir to combine
7. Remove from heat; season with salt and pepper to taste
Creamy Au Gratin Potatoes
Russet potatoes; thinly sliced
Butter
Medium onion
Salt and Black pepper
All-purpose flour
Milk
Shredded cheddar cheese
1. Butter a casserole dish
2. Layer ½ of the potatoes in the pan; season with salt and pepper
3. In a medium saucepan, melt butter
4. Gradually whisk in flour and salt to make a roux
5. Slowly add milk, whisking well as you pour to avoid lumps
6. Continue cooking until mixture is thickened
7. Add cheddar cheese and stir until melted.
8. Pour cheese sauce over potatoes and cover with foil
9. Bake at 400° until potatoes are tender and sauce is bubbly (1-1 ½ hrs)
Steak
Steak (filets)
Omaha Steak seasoning
1. Flash sear on stove on one side for 2-3 min
2. Flip steak and immediately put into oven at 300°
3. Cook until desired temp (9-11 min for medium rare)

Steaks are already a near perfect cut of meat. You really don't need to do that much to them.

There is something so calming about watching Bryan cooking with Bert. There doesn’t always need to be noise to fill space. Sometimes the silence holds the truth/purpose. I feel like life is so busy I find myself being comforted in the simple tasks of things. Thank you for doing this show and bringing people together in what normal people do- cook. It is one of the greatest gifts in history.
Please do a part 2 of this Ep and let Brian cook! Love Brian and Sam, and this was a great episode
The fact that he mentions Tim and Whitney are coming over for their episode right after this multiple times is hilarious! This explains why the Tim and Whitney episode was such an epic train wreck! He makes Sam and Brian a legit meal while getting loaded, then he gives Tim and Whitney some caviar and a piece of Salmon with a whole container of mayo on it.
It all makes so much sense now

I love them but WOW! was that episode bad. Hopefully he doesn't film the episodes all in one day in the future. I know he's busy but he's got to only do one show a day.

I hadn't heard of Brian but Sam has seriously stepped his game up in the last few years. Now that I know both, they are def top tier.

This episode was fucking great! The food actually looked good and simple like most of the best recipes are. Brian calling the audible on the butter for the steaks and Bert adjusting the timing accordingly to cook them perfectly was impressive!

You need a camera overhead to catch what the pans/pots/plates look like. (Yeah, it's nit really about the food, but it would still be nice to see head-on. )
Pretty sure Bert's stated he did block filming for these episodes (due to touring/scheduling) so I wouldn't expect it in the next few eps. But I agree, that would definitely help and I'd love to see it as well! Hopefully someone sees this and it gets added to future eps/seasons!

Episodes like this that juxtapose how crazy the Whitney and Tim episode was are what make this show so cool.
I love Brian. He's so perceptive. I also love that he very politely insisted he cook next time, because he looked at those steaks like "this fucking guy cant build a crust on a steak for shit, give me the tongs".
He didn't sear both sides. He put it in the oven immediately after flipping them.

Little tidbit for anyone wanting to try Bodega cat. Much like Brent Kirster I drink often. I’ve tried every brown alcohol in the market. Tbh this is one of the best bang for your bucks. The vanilla comes through perfectly giving it a great after taste. For 40$ I added this as a regular. Much better than proper twelve.

Ngl, in past episodes of Something’s Burning I found myself wondering how it’s any different than a podcast, like what’s the point of Bert being distracted cooking?
This episode proved those thoughts wrong. The attention everyone gave to the food being made was so genuine and the conversation flowed right along. Beautiful episode that really showcased the positivity of these fine fellas.
Very low chance this is seen but I noticed the cutting boards in the background. They are laying flat, this can cause the cutting boards to cup and ruin them. Place them somewhere vertically to allow air flow. Just looking out for what looks to be some pretty cutting boards
