I’ve made a few different NY Hard roll different recipes .......Is your recipe very dense or like the rolls we used to know in NY ? The ones I LOVE had a nice cracking crust but real light and airy on the inside? Thanks in advance
These are no Kaiser Rolls, they are simply rolls with a cross cut into them. Kaiser rolls don't have a cross, they have 5 segments that are stretched and folded when done the traditional way. They still have 5 segments if you use a cutter.. Also the dough differs, too, the malt is missing and oil has no business in Kaiser rolls either. It's butter that's added once the dough comes together. The rolls in the video may be tasty, however, they have no shine and the wrong shape... Why call it Kaiser rolls? Just call them rolls and all is well.

Hard to tell how good they are without seeing the inside. Are they light or very dense? Good job but needed to see the final roll.
