Simple Homemade Avocado Toast with Poached Egg - NoRecipeRequired.com

Avocado toast has made breakfast better. It's all over the place with so many versions it makes your head spin. I love the creativity I see at the various bunch spots I frequent, but I've taken to make a simple and delicious version of my own at home.
My version is topped with a soft poached egg, and garnished with a bit of red pepper flakes and paprika, which gives the toast a bit of spice and heat.
For the toast I'm using a fresh toasted bagel...but I also love some good crusty fresh bread, sliced thick and toasted. In a pinch I'll use a slice of grocery store bread - it's still good - but something more substantial makes for a better dish.
I treat the avocado very simply, with just salt and pepper. But you can certainly add some lime juice, chopped tomato or onion...just about anything. Be creative.
