When I first watched this video a few months ago I started making my own variation of this chili and it's become a family favorite. I purchased a pressure canner but haven't used it yet, maybe this winter I'll give it a try. Thanks for the great videos!!!!
@n00bCoach typically i have been told you can keep canned meats for up to 7 years before they get soft. Just make sure that when you open them you heat them up properly for a minimum of 10 minutes before you eat them. Spores of Botulism are killed by pressure canning but if an error occurs, the anerobic environment inside a canning jar is the perfect habitat for the botulinus toxin to develop. The toxin is killed by heating to simmer and simmering for 10 min....
@NailsByAngelina if they contain meats they need to be a pressure cooker, water baths are good for high acid canning such as tomato sauces, salsa, jams and jellies.
thanks for you vidios can you can whole meals if you cooked with frozen meats i see some vidios where they used frozen vegis and they usuly make a lot when they cook so they can ca n the left overs pleas respond thank you so much i am new just starting to can. itry to learn as much as i can before i do any canning.
@emerson24 Its not the time that is affected by altitude, its the pressure. You add 1 lb of pressure for every thousand feet above sea level. Many foods do not have to be cooked all the way through before you can. For instance...I have 4 chickens (freshly butchered from the backyard) in a pot ready for canning. I cooked it about 2/3rds of the way through. It will finish cooking in the canner. Im at close to 1700 feet in elevation so Ill cook my chickens for 1 and a half hours at 11 lbs. Cheers!
Hi, I just found this video. It's awesome. But, I have one question. Every time I cook beans in a stew, and then can it, they come out like mush in the jar. Am I doing something wrong?
Does anyone know the answer to this question: The altitude may add one minute to your processing time. Does a minute really make much difference considering that you are already letting it sit until the pressure comes down? In addition, you must tinker with the temp to get it just right which ultimately you windup exceeding the rec. pressure anyhow which really should lessen the cook time as this increases temp. Also, if you cook it to where it's ready to eat, doesn't canning over cook it?

Question: Have you ever considered using the vegetable trimmings to make Veggie stock? You could can or freeze that as well.

Its called southwestern chili. Chunks of beef...Whole red peppers if you like. There is no rule on what kinda meat you have to use.

not supposed to can beans WITH meat in jars. there's a risk the heat will not penetrate all the product therefore there's a chance of botulism.
Canning meat with beans works great and is safe to do if you follow guidelines.
