Enrobing table works in conjunction with an automatic tempering machine and significantly expands its functionality. Feel free to glaze sweets, ganache, biscuits, coockies and any other confectionery quickly and easily. The table is foldable and does not take up much space on your production line.The tape is easily combined with a cooling tunnel.
The machine is designed in such a way that the chocolate is constantly in working order, circulating in a closed circle. The temperature of the chocolate in the bawl is 45 degrees. Cooling takes place at a specific point in the flow inside the machine, which allows the creation of a seed for tempering. At the exit of the machine chocolate at a temperature 31 degrees. Under these conditions, recrystallization does not occur, and the stability of the chocolate remains.

@Kadzama I guess cleaning is a bit headache, no? but in general it is a useful machine👍

it's a headache, indeed. But in general use, it does not get "cleaned" as such. When stored properly, the equipment retains the (hardened) couverture until the next use, it then heats up to be used again. Chocolate (couverture, in this case) can keep its freshness for a while (albeit not for months, of course, regular use is a must)
