    For anyone wondering, the movement continues after the spike through the brain because of the nervous system. The eel is already dead, yet spasms until the spinal column is removed, thereby disconnecting it from the nervous system. No electrical impulses = no movement.

      The spike doesn't pierce the brain, it's set between the jaw and the skull and its sole purpose is to fixate the eel for filleting. (The immobilization itself happened before, when the eel was put on ice for a while.)

    Welcome to this video, where people don't know that dead bodies spasm and think being stabbed through the brain with a metal spike didn't kill the eels instantly.

      Putting a metal spike through the head allows the eel to not feel anymore pain, it becomes brain dead. It doesn't mean the eel is dead but it's less likely to move around when being cut up.

    This is why Japanese people say "Itadaki-masu" before every meal ladies and gentlemen.
    "Itadaku" is a polite way of saying "to take", and "masu" is a word you place at the end of a verb to make it sound more polite.
    That's double the politeness.
    You gotta thank every inch of life and skill that went into this dish presented before you, dead or alive.
    So, to people who are arguing whether the ell is dead or not,
    just give the ell a mad respect for giving it's life to let us survive and eat tasty things GOD DAMN IT!

    Grilling seafood is a very challenging task because they shrink and burn easily, but this chef did it to perfection! i cooked eels before and I used ash to remove the slim from the skin, then cut the eels into 1/2 medallions and season them with salt, pepper, and soy sauce. Then stir fried them and add oyster sauce, garlic, green onions, and crushed peanuts.

      Man I really hate that series now, used to be my favorite when S1 was just released. When I became a manga reader because some anime finish mostly at the middle point, Shokugeki No Souma was one of the manga I read, and it was there that I saw the direction it was taking. Frankly it was a disappointment, might as well just put it that the manga ended with the regiment Shokugeki arc cause the Blue arc sucked as well as the dessert 'cause the author failed to finish the story in a manner that satisfies the audience, basically he fucked up the flow of the story.

    For me, I was very grateful to be shown this place! I may never get to go there in my entire life. But now I can imagine the texture of eel, the smell, and the taste... Thank you! And especially for the shots of rice and pickles, they help break up a meal. It was very satisfying indeed

      A lot of sushi places make rolls with grilled eel if you wanted to try some. It's not as fancy but they use that same sweet sauce and usually some tempura and its awesome.

      @@lm-pw9ul Unagi sauce means Eel sauce, since Unagi means eel (freshwater variety). There is also Anago, or salt water eel .

    I’ve never had the opportunity to try any eel, least that japanese way so I can only imagine how it tastes like. I don’t see why not this could be the most delicious thing on planet earth. Japanese understanding of the fish and ways of cooking it are just like nothing else. Big respect from Finland! This made me hungry, made me even smile when thinking about how good it must be and at least now a trip to Japan is on my bucketlist.

      It's amazing. It doesn't taste like fish or seafood. It tastes like maybe chicken/pork but way way better, not even comparable really. It melts in your mouth. I highly suggest trying some. The sauce they put on it is amazing also. There is no gamey meat taste. It just tastes really nice, tender, flavorful, and lovely.

      first of all this is Japanese food not Chinese, and Japan is a country with a high level of hygienic and cleanliness, secondly eels are common food in several countries, Indonesia, japan, Malaysia, France, etc. I don't even believe that someone doesn't know eels are common food, eels are a type of fish that has good nutrition.

    In case this made people light headed like me just from imagining the pain, I did some research on this.
    The ice is for numbing and inducing hibernation for the eels and the tesla logo is for severing the nervous system from the brain. (instant death)
    The movements are from the remaining neurons firing as a reflex as the nerves remain alive for a while after death.

    a priceless vid guys! this is Unagi heaven! no one in this world can resist the sweet taste and soft , smooth melt in the mouth texture of those grilled Eels! i once heard a story of an Unagi joint owner who used unagi sauce for dipping Eels during grilling that was made by his grandfather more than 70 years ago , that sauce survived WW II and was kept in use daily by family members till this day in the same Unagi joint! Japanese people are really dedicated to their culture and heritage!!!!!!

      Oh I've had unagi before, many times. I was commenting that I want to try that restaurants sauce. Every place has slight variations in how they make thier sauces. The sauce in the video looks amazing. And the beautiful char on the eel looks like it would make the sauce even more delectable! It would probably put my homemade teriyaki sauce into dishonor!

    Oh man does this ever get my mouth watering! I am obsessed with Unagi. Ive never had a chance to eat it straight from live, to the grill then served. I can only imagine how good it is because I love the frozen unagi sold here locally. If I can love the frozen and reheated eel, the fresh like this has to be unbelievable!
    I also love the sauce on everything from rice to fish, chicken, veggies, etc. I would dunk my head into that vat of sauce just for a taste! lol. Yes i love it that much!

      100% agree with you Jeff. The ones I buy from the international market come in a clear and gold package with red kanji on it. I'm like addicted to these things. Taste so good

    I love this video! I love eel! This video is going on my most repeatedly watched video playlist! I am drooling buckets right now.... That location is on my food bucket list now. I want to move near by that restaurant so I could have it every day! Well done travel thirsty! This is a video I have been hoping to see ever since I subscribed over a year ago!     This eel kabayaki is grilled in the Kansai style. In the Kanto style, when cutting an eel, it is cut from the back (black side) (because Edo is a samurai town, this is reminiscent of seppuku). Plus, "Kanto style" involves a "steaming" process after the mackerel is grilled (to make the eel more plump). There are delicious ways to eat eel all over Japan, so I think it will be fun to try and compare them when you come to Japan.
    このウナギのかば焼きは”関西風”の焼き方です。”関東風”はウナギを捌くときには背中(黒い方)から捌きます(江戸は武士の町なので、”切腹”を連想させるため)。プラス”関東風”には、鯖いて素焼きしたのちに”蒸らし”の工程が入ります(ウナギをより”ふっくら”させるため)。日本全国各地にて美味しいウナギの食し方があるので、来日した際には食べ比べも楽しいと思います。

      ​@@cnizamoglu The eel sauce pictured from 9:56 to 10:09 is generally made with a combination of soy sauce, mirin, sugar, and sake (each store's original, no two flavors are the same). Also, the combination of eel oil creates an indescribable deliciousness.
      9:56~10:09に写っているうなぎの”付けタレ”は一般的には、醤油、みりん、砂糖、日本酒を配合して作ります(各店舗オリジナル、同じ味はありません)。あとうなぎの油が合わさって、もう何とも言えない”美味しさ”になります。
