Fluffy Japanese Milk Bread with Pandan Custard

  • Pandan Custard Milk Bread
    (18cm square cake pan)
    Milk Bread
    Ingredients:
    185ml Milk
    3g Dry Yeast
    250gr Bread Flour
    30gr Sugar
    3g Salt
    20gr Unsalted Butter (room temperature)
    The best milk temperature for the dough:
    about 10°C for summer
    about 30°C for spring and autumn
    about 40°C for winter
    Directions:
    1. Combine milk and dry yeast.
    2. Combine bread flour, sugar, salt then add milk mixture and mix with mixer at medium level (level4). Mix for about 10mins.
    3. Add butter and mix again until elastic.
    4. Shape the dough into round and divide into 2. Drop some pandan paste into 1dough and mix well.
    5. Coat a bowl with butter.
    6. Make the dough round and put in the bowl. Cover with damp towel or plastic wrap and leave it at warm place until it get twice as bigger.
    7. After rising, degas the dough and divide each dough into 8 equals pieces and shape into round ball.
    8. Cover with damp towel and leave for 15mins.
    9. After resting, deflate with your hand, round and smooth the surface of the dough well, and firmly close the seam.
    10. Place them on the square pan and cover with damp towel. Keep it in warm place and let it rise for about 45-1hours.
    12. Cover with aluminum foil and bake it.
    13. Preheat the oven at 180°C and turn the degree down to 150°C and bake for 15mins.
    Pandan Custard
    Ingredients:
    100gr Pandan juice
    300ml Coconut milk
    3tbsp Condensed milk
    3 Eggs Yolk
    20gr Sugar
    1tbsp Corn Flour
    4tbsp Evaporated Milk
    6gr Milk Powder
    Directions:
    Boil coconut milk, pandan juice and condensed milk.
    In another bowl mix egg yolks, sugar until sugar dissolves. And then add corn flour mix well.
    Pour some of coconut and pandan mixture and mix quickly. And then pour all of the mixture and mix again.
    Pour back to the pan and cook until it’s get thicker.
    Add evaporated milk and mix well.
    Let it cool and strain the custard.
    Place it into piping bag.
    Poke a hold at the top of the bread using chopsticks.
    Pump the custard in, as much as you can.
    Spread butter on top of the bread. And dust with icing sugar.

    Hello, how many grams is the milk powder since you put in some milk powder to the dry ingredient but it's not listed in the ingredient list in the description box.
