One Bite and You're Hooked | Life-Changing Panang Beef Curry

  • A delicious Curry is truly a great recipe to know to make, it can be relatively cheap and easy to pull off you just need a little patience when using tougher cuts of beef. This Panang curry is one I think every aspiring home cook should have up their sleeve ready to deploy at a moment's notice.

    Homemade curry paste recipe:
    1 cup rough chopped shallots
    2-3 sticks of fresh lemongrass
    1/3 cup ginger or galangal
    10 cloves peeled garlic
    4 dried ancho chilis
    4 guajillo chilis
    1 tsp shrimp paste
    Zest of 2 limes or 2-3 kefir lime leaves
    1/3 cup cooking oil
    2 tsp salt
    Panang beef curry recipe: for 3-4 pounds of beef
    1 tsp coriander seeds
    1 tsp cumin seeds
    2 tsp lime zest
    2 13 1/2 oz cans coconut milk (reserve 2 tbsp for garnish)
    3 tbsp fish sauce
    6 tbsp curry paste
    1 tbsp coconut or palm sugar
    3 tbsp chunky peanut butter
    salt to taste
    Garnish with slivers of chili and lime zest (also kefir lime leaf)

      Please don't ever substitute Galangal with Ginger. They look similar but they are totally different in flavor.

    As someone who has lived in Thailand for a couple years and has made countless amounts of Thai curry paste, a really good thing to remember is when using a mortar and pestle, start with your most fibers ingredients first (lemon grass, Galangal, then use the salt on the chili peppers, it helps with the grinding. That way you have a chunk less paste. Also the marrying of all the oils are worth the labor of grinding.

    Dude, we ride on the same wave, I'm telling ya. First it was the Steak Oscar episode, on the day before I got some freshly caught Dungeoness Crab. Today, I woke up on my day off with the intention to buy Thai curry and THIS video drops! Incredible! Haha...as we like to joke in my house, "Thai food is the only thing in town that we can't make ourselves!" Totally going to make this to expand the home cooking. Thank you, my friend, for all the tips, entertainment, and new ways to "wow" people with food. Going to find a way to get you back for all this help!

    A place in Austin, Tx called Madam Mam's Thai makes a Special Panang Beef Curry (P41 on the menu) that is exactly like this. I moved years ago, and since then I have tried many Thai restaurants on the east coast, west coast and up in the north.....and I find no other restaurant that makes it this way. Not a one of them slow cook the beef until it is "fall apart"... melt in your mouth. Virtually every other restaurant takes a shortcut, and prepares it like a beef and broccoli style dish... thin strips of meat that are velveted in baking soda, then tossed in the pan and prepared like a Panang stir-fry. It leaves a lot to be desired, in both the meat as well as the depth of rich flavors in the Panang Curry sauce. This is THE VERY BEST recipe for PBC period. To wit... Mouthwatering! There is no substitute.

    We make this a lot at home and if you do, you must add the shrimp paste, it makes huge difference. And i agree on the shop brought ready made paste's, they are very good indeed, just don't get a sauce, get the paste.

    We just use Mae Ploy Thai Green & Red Curry Paste, which is made in Thailand. Being honest buying the Mae Ploy is cheaper for us than buying the ingredients to make DIY version and we preffered Mae Poly's flavour to our attempt of the homemade version. We like to make this recipe in large batches in the slow cooker and the extra which we then portion out for freezing. Often we make burrito's using the frozen beef curry.Thanks for the recipe it has become a firm family favorite over the past 6 months, take care, God bless one and all.

    We have been making this with cubed pork shoulder lately in the instant pot duo. Main reason money pork shoulder is 1/3 the cost of beef locally ATM and using the instant pot is quicker but more important saves energy. For best results we just let the curry cool to room temp in the pot with a natural release, then into the fridge for at least 24 hours before serving or FREEZING. The resting time before freezing is important if you want the best results. We measure out a varitiy of serving sizes of portions into ziploc bags, removing as much air as possable and flattening the bags on trays in the freezer. Freezing like a flatpack serves to 2 main reasons first is it defrosts alot quicker than some lump in a bag, lay them on a wire mess tray to allow the air to circulate, even point a fan at it to speed things up. The second reason is flatpacked they take up less precious space in your freezer, we use a plastic box and slide them in like file index and yes i include a devider with details as well as writing on the bags, OCD rides again.
    Again i can not recommend this recipe enough, the cheapest and IMHO best tasting way is to use Mae Ploy curry paste. We like to put the paste in icecube trays to then pop them into ziploc bags, the paste keeps well for 3-6 month depending how low your freezer goes. The pastes are excellent value for money and you don't have all those hard to get expensive herbs and spices slowly dieing in the back of the cupboard.

    Can I say at the final steps in that big pot, I would pour in some coconut cream first to let it cook and render out that coconut oil. Then I would throw in that curry paste and cook for a minute or two, then throw in the beef and keep stirring, then add in the rest of the coconut cream. That way you would get a layer of really nice red oil and the flavour is 🤯

    i know for a fact that a lot of thai restaurants in my area buys pre-made curry/sauce for their dishes. If these restaurants uses pre-made stuff, its totally fine if you choose to use pre-made for your meal.
