I will have to wait for winter to get good citrus here in Florida. We have a shortage due to a disease caused by an Asian bug that has killed tens of thousands of acres of groves. I will try this with Ruby Red grapefruit, and I will make lots of orange marm, too. It’s my favorite. I bought a new water bath canner especially for making marmalade, but I will try some low sugar jams for Hubs, too.

I ended up with twice as much and it was very watery. 2-1/4 cups of water and 2-1/4 cups of fruit/juice/peels; 4 cups sugar. did all the cooking times and boils, etc.
Cooking time varies on your environment. If it’s to watery, it needs cooked down more, then it reduces volume and thickens up. I’m in the desert, if you are somewhere humid, your cook time will be different. This is true with any jam/jelly recipe. You need to check your set as you cook.
When I make mine, I strain the juice and count that in my water amount..... just my little tip

confused on the difference between Ball Classic Pectin and Sure Jell Premium Fruit Pectin. I got Sure Jell and tried googling the difference between the two and what i could figure out you can't substitute but I don't I understood it correctly. The recipe in the book is 6 tblsp of Ball Classic Pection so can I use 6 tblsp of Sure Jell and still get the same result? I have watched this 4 times now..I have everything ready to make it now, even jars and lids!! Yes I am brand new to all this just in case you couldn't tell..
You would use 1 box of sure jell or you can use 6 Tbsp out of the jar of Ball classic pectin. I don’t think there is much of a difference. 6 Tbsp is probably what the box contains. 😊 Hope that helps.
Can we add jalapenos? If so when would it be the best time to add it.
Sure, add with the fruit, 2 tablespoons chopped jalapeño.

Well... interesting video. I am starting to make marmalade. I'm in Wisconsin. No snow yet, but it is relatively cold outside... though I did hear a really tough individual accelerating his motorcycle from the intersection out front. Decided to take a test photograph of my kitchen with my son sitting at the table. Used an original Nikon F coupled with a Heiland flash gun to fire an actual Westinghouse #11 Synchro-Press flash bulb bounced off the ceiling. Exposure 1/60th second at f/22. GN 400 with Ilford HP5 Plus. Hey, in these times, you take your amusements where you can get it!
