Being born and raised in Chicago it's a huge misconception that we only eat Deep Dish Pizza. Deep Dish isn't bad but we have some of the best "tavern style pizza" and normal "New York style pizza" in the world. Very few people eat only Deep Dish

I live in Chicago and also dislike Lou Malnati's, I've always hated when people say it's the best pizza in Chicago because I know they'll be disappointed, the best pizzas are the hidden gem pizza joints outside of the city, but if you want to go main stream, Giordanosl's stuffed pizza or Connie's deep dish is where it's at

When ordering takeout or delivery, Lou Malnati‘s gives you the option to have the pizza cut or not cut. If you don’t cut it it’s supposedly keeps the pizza crispier and more fresh rather than if you do cut it.
You must have been talking to transplants or tourists. No Chicagoan will tell you Lou malnatis is the best for thin crust. You only get deep dish from Lou’s. There’s 1 million mom and pop pizza places in Chicago to get better thin crust.

i lived in Chicago my whole life and have never been to lou malnatis, also, we do not regularly eat deep dish pizza, it's mostly tourist in those places. if you order a whole pizza they are cut in squares/rectangles, if ordering by the slice: a triangle.
Chael, my Dad who grew up in Chicago (Uptown) in the 50's would tell you Chicago pizza is not deep dish. It's thin and the crust is crisp. Brick oven and cut into squares. Italian sausage, green peppers, mushrooms, black olives when you're in the mood for them, and a little well done. That is a Chicago pizza to us.

I'm from Chicago, originally. Pizzas always came cut when I lived there. There are tons of exellent pizza places. That's just weird. I'm confused, Lou Malnotti's is well known, as are Duey's and Uno's (3 most famous Chi-town pizzareias). I'm sorry that happened to you guys. What a disappointment that must have been. What a shame.

I've personally for at least a decade do uncut when I'm getting pizza delivered or carrying out.
It prevents the grease, sauce and condensation (from going to a hot oven into a room temp box) from softening up the pizza.
Uncut helps prevent this saturation so you can still have a nice crispy crust by the time your ready to eat it.
Lou's in the last year or so recommends doing uncut because of what I mention above. If you ever had Lou's brought home they're hot as hell and it basically turns into a steam bath while it waits for you to enjoy it. add the little bit of grease and sauce flowing downward and you have a nice soft pizza instead of that phenomenal crisp.
Id highly recommend pizza uncut if the pizza has to travel. That goes for deep dish or thin crust.
I do know some people who just get off on complaining about how bad something is and that's where the cut pizza comes in. It completely degrades the quality of a traveling pizza leaving someone with plenty to complain about in terms of consistency.

Fun fact: Deep dish pizza is for tourists and maybe once in 3-4 month thing for locals. But thin pies were on the list weekly for natives. A sad fact i've found is that the pizza quality overall isnt as good as it was back in the 70's - 90's. Also, pizza life, especially chicago tavern style (thin crust) is VERY short. After 13-15 minutes from the oven, quality degrades at an exponential rate....grew up on the Southside of the city

If by some misfortune you happen to be going through Steubenville, Ohio or Wheeling, WV you should try DeCarlos pizza. It's a style called Ohio Valley Pizza.
They bake a full sheet pan of crust and sauce. When you order they cut as many pieces as you like, put it in a box, put all of the toppings on, and send you on your way. It's interesting. I like it. The cheese warms up from the crust but doesn't really melt. It just gets soft.

I have "heard" that deep dish is for tourists in CHICAGO. Thin crust pizza is the real chicago pizza. And Parlors is the place to go.
As a displaced st louisan I’ve learned Chicago people don’t eat deep dish. Flat crust all the way.
We do eat it but usually at graduation parties or work outings etc. For friday night pizza thin crust always.
If the pizza’s not cut it’s for throwing on the roof everybody knows the rules.
Chael if people are talking about their deep dish it sounds like that’s the fair thing to judge them by. You could say it’s a variation of lasagna if you want but it’s still the correct dish to judge off of.

Local here, Lou Malnati’s sucks - everyone who claims it’s the best is speaking of their deep dish slop. Then you have the thin crust which is god awful. They’re quite literally the last place I’d get pizza from in any form especially in the city.
