I think they just often say the time since they started trying to make it. They consider that over the excessive amount of years, they have perfected it. But in reality, it wouldn’t be too far off from a few months after they learned how to do it right

When I visit Japan 1 time I would really like to go to the anime places and to this restaurant! And both your attemps at the omelet were great! I really enjoyed this!!!!

This reminds me of hand pulled noodle chefs describing how they mastered their craft. There's so many factors to making it perfect that you can't just teach it to someone, they have to work at it over and over again until they discover the method that works for them. I love how nice this guy is. To him, making a good finished product is all that matters, perfection isn't required, because it isn't expected at a beginner level.
With the quip about Japanese eggs being made to prevent salmonella, living in Asia (I'm in Korea), I realized other countries tend to have less salmonella in eggs than back home in the US. I read that it's likely due to the fact that in the US, commercial farms are required to thoroughly clean their eggs. It's maybe unintuitive, but washing them seems to force some of the bacteria through pores in the shell, sending them to the inside. It's why in many countries, people store eggs wherever, whereas in the US, they usually need to be refrigerated.
@@howardlam6181 Washing the eggs removes a thin cuticle protective cuticle layer on the eggs. And with the layer gone, they're more prone to infection by bacteria that they could come into contact with. Even if the washing machine were to have a tester for bacteria, they could come into contact later, like if you were to have cross contamination with another food product you were storing.
I was doing my solo travel and my first 10 day vacation in Japan back in 2016. Was in Kyoto for 2 nights and made sure I ate here! Met the chef and he was really nice.!!! Had a photo op of course! 😉 Great vid!!! Good to know the place is still open for when I plan to go back and visit.

This is really nice. I've made omelettes before but my biggest issue is always trying to get that flip in so you can get the right texture. Very informative.
