Thank you for your video. As a person living the Carnivore way of eating, I have missed having something for snacks and I think jerky is going to be a good option to keep me on track. It's just hard to cook a steak every time I feel hungry. I can't wait to try this out...
I recently tried making the jerky with only Redman's real salt but it turned out tasting horrible, so I wasted two pounds of ground beef... I had to throw it all out... I can't eat the things that make it taste good, so I am back to no snacks if I want to eat Carnivore. My body doesn't tolerate bacon so that's out for snacks too. I have to get some pork belly and try that.@@adamfalgout6601

Dang! Looks awesome, this video inspired me to go to grab a jerky gun. lol One thing i've been doing for my regular jerky is after I dehydrate it, throw it in the oven for 10 minutes at 285 degrees. Nice little extra food safe insurance .guess it'd be fine for this style?

Actually ground beef jerky where I live is more expensive than making it with a cheap piece of meat because when a roast is on sale it's usually cheaper than the ground beef
William I bought a meat grinder just for that reason. After I got the grinder I found there are so many uses for it and the injector I use makes a lot of difference with wild game also.
I imagine that jerky would also be good if wild game was used, as it's very lean. That jerky looks fantastic. Jerky is one of the ultimate snacks. Cheers! ✌️

@@JudiChristophermy research and experience is .25% cure salt #1 to the weight of the meat. In grams I multiply the meat weight times .0025 and that gives me the cure salt amount by weight. Roughly 2.5 grams per kilogram of meat.
What I do is put in the recommended amount of cure #1 and let them sit in the fridge for 24 hrs. before dehydrating. I do this because I don't like them cold and if you don't use the cure you have to keep them refrigerated.
They look delicious, the smooky colour looks more authentic than the dehydrated versions. Do you think it tastes better with ground meat as it has a bit of fat that adds flavour. I make salami and dry Other meats, I find the fat really adds the flavour and critical for salami/dry sausage. But you probably don’t get that jerky tough chew when you eat.
Oh absolutely Anthony the flavor is so much better with fat in it and also you get a little bite but you don’t get the toughness that you do with just regular jerky ! Thanks for checking it out !
Thanks for checking it out Tyler. By definition jerky is dried meat which usually contains salt to prevent bacteria. The South Texas Red seasoning contains a high content of salt. It’s ok if we agree to disagree. Too many people these days can’t tolerate others opinions ! I value yours !
Respectfully you are wrong jerkey by definition is "lean trimmed meat cut into strips and dehydrated to prevent spoilage" or "dried, salted meat". So salt isn't even required necessarily to call it jerky second, sodium nitrite is linked to cancer so why use it when regular salt (not linked to cancer) is better and more readily available.
Do not add curing salt, my first batch of ground jerky is cooking right now (I used curing salt) and it looks TERRIBLE. Another recipe I was going off of didn’t use curing salt either, idk why I did.
I think you need to look up the definition of jerkey. You don't have to have sodium nitrate you just have to have dried meat and it can be salted. Also sodium nitrate is the reason why processed meat causes cancer so why add it? Just leave it out and have a good wholesome snack.

PS I let them dehydrate/cook for 8 hrs at 140 It may take less time if you go 180.
