  • Lots of people like Hummus as a dip, but based on my observations at the grocery store, very few know how to make it. Moreover, in my experience, very few store bought versions are any good. If you like hummus and want to learn how to make your own delicious hummus for a lot less than the lousy stuff you would pay for at the store, watch this video!

Just a couple of tips for those not familiar with an immersion blender. Put the head of the blender all the way down to the bottom of the container before turning it on. Otherwise it will throw food up and out. Also, ingredients should be in a deep container with straight up sides. Food should not be coming anywhere near the top edge of the container. Most good immersion blenders come with one.

Also, they don't really work unless the food has enough liquid in it. You can't use it as a food processor on dry items.

    Alright, sir! 👍🏻
    Visiting you in April, 2024.
Thanks for the effort and tips 😮!
So it's been 6 years, from a time hummus was starting to be a great deal! Nowadays the web is so full of hummus recipes!

I love my hummus! I add the whole bulb of garlic and start my recipe by using sesame seeds with oil and water to make my own tahini before I add the rest of the ingredients for hummus. Love your demo. I once added peeled and seeded cuke chunks and it was so delish!

My wife and I have watched every Good Eats episode. I've always loved the comedy and scientific explanation that he gives. We call him Uncle Al on account of the shared last name. I definitely appreciate your taste on things, Greg.

I made it a few times with a regular blender. Your method is much easier to clean up.

Thank you for the suggestion of using the large measuring cup. I was about to use the hand-blender's cup, but the cup worked better. Good demo!

Thank you for adding your cooking shows! I got all of my ingredients and I'm going to attempt making humus tomorrow. I am guilty of buying the tiny plastic tub for too much money but not any more. I also just watched your mayonnaise video and I'm going to give that a go also.

I made my humus this morning then made some pita bread to go with it. It turned out great. I used olive oil because I like it, then finished it with with a drizzle of olive oil on top and some smoked paprika. No more store bought humus. Thank you.

Hey Greg, I'm back for the one yr anniversary of your publishing this hummus recipe. I get a lot of laughs from how you toss and "slam" things around... and your commentary is also quite funny at times. At the moment I've got chickpeas cooking in the Ipot. I think it's time I made some real hummus! I'm here in Colorado, USA, where it was 80plus degrees (F) yesterday. It is now 20F and we've got snow!! Garden is in shock! Time for some kitchen food prep. Hummus makes a good companion with pita/crusty bread and soups and stews. It'll be back up in the high 60's (F) this weekend. CRAZY!

I'm so glad you find the video useful and entertaining :) Sad to hear about your garden but I suppose its just part of the cycle. Does winter always start with a bang like this in Colorado?

You're a youngster yet, but you're right about store bought hummus... we've been making hummus since the 1980's; it was all the rage back then too. I use a Harrowsmith cookbook version, but will enjoy trying yours. Thanks!

One reason I wanted to start making hummus is because it is one small way that I can avoid adding more plastic to the landfills (not very much is actually recycled)

Measuring oil first before tahini (or honey, etc.) helps sticky ingredients slide out easier.

I don't know. I've never made more than this amount, and it never lasts more than a week. I've read that you can freeze it - but I've never tried that, and I have no idea how it might affect the flavour. Wish I could be more helpful.

when i cooked my own chickpeas, i saw the bean "hulls" or "skins" coming off. They have a tough texture... i actually took the time to remove them... very time-consuming. No fun. I wonder if the canned chickpeas have the "skins" removed before canning? i doubt it. What would Alton say??? i will definitely use this recipe. Thanks! (and, hey... i got out there and got at it in the garden today here in n. colorado...)

Good for you getting out in your garden! There is a translucent skin sometimes, but that seems to just disappear with the whizzser! Re: Alton: He's my cooking guru for sure!

@@CJFarm I roll them between my hands under a small stream of water and it comes off pretty easily. The hummus is much creamier without the skin!

I would leave out the oil. It's empty calories and only serves to harden your arteries. The tahini provides all the richness/creaminess needed, and it's a whole food. Just add some of the cooking liquid from the chickpeas if it's too thick.

The word hummus was used in ancient Egypt. Ancient Egyptian spoke Afro-asiatic and Ethiopia, which was Kemmet. Where was Arabia at that time? 🤔. Nice to forget your ancestors.

Well Jamie Oliver took 17 min, and that's with a cameraman and everything, so I'm not going to feel bad about taking 20. The vid was meant for people that have no idea how to make it, so I talk about every little thing that I can think of that people might want to know. Clearly doesn't appeal to you so sorry about that.
