you're pretty small so it may work but ideally you want as much foam and volume as you can get. Wavestorms are pretty wide - my sister also close to your size complains about not being able to paddle on them. you might want to try out the olain 500 series from decatlon they have some inbetween sizes!

I want to buy a beginner surfboard to start progressing solidly, what about a 6'8" 75L foamie or the same board but 8'6" 90L volume? Any other suggestions like a mini mal?

Keep in mind the recommendations are based on my experience as a surf instructor. An 8ft 80L board will work fine, although in my experience, a 9ft board makes it easier for people in your weight range to catch waves. Hope this helps!
yes i think 5'11 is too short for a beginner to feel stable. if the 8 ft - 9ft boards are too wide for you to paddle, maybe try a 7'8 or something a bit smaller, but definitely don't go down to 5'11
unfortunately softtops don't have much variety in their width. You buy a board based on length and they don't make different versions for different widths

Wavestorm is the most affordable Soft Top on the Market. Most of the other Soft Top brands charge 4 - 5x more. Good Luck!
