Yes, we can. Cool the oil completely at the ambient temperature. Use a metal strainer lined up wit 2 kitchen tissue papper ( Must be of good quality) and pour the oil into strainer. It may take some time to strain the entire oil completely. Once done, you can reuse, preferably for frying chicken again.

Hi bro,, to fry 500 GM chicken ,, you’re using 1 liter oil,,, so what do you do with the oil after frying…. Dispose it .? But Recipe is good👍🏻 I liked it .. will try it and send the feedbacks,,, but pls shed some light on what do you do with the oil after frying….
People usually reuse the oil for other cooking. It depends on how much the oil has been used. There’s a Chino testing method in the food industry until when the oil Can be reused after which it is is disposed. It’s cheap to get the kit and know if the oil is reusable. There are rumours that big hotels sell their oil to small restaurants which is part of the reason people are asked to eat at home and not eat outside regularly.
@@jerryantony1040 thank you so much for your reply,,, will see if I could find chino meter in Amazon,,,, thanks for the info .. I haven’t heard of this before,,,by the way I tried your recipe,, tasted really good like restaurants (when deep fried) ,,,,,,tried shallow fry ( good but not like the deep deep fry - tasted like homemade),, my hubby fried in air fryer yesterday ,,,that was also good but the first place 🥇 is for deep fry ..thank you and have a blessed morning
@@prathysamayal no worries about the reply. I didn’t know what it was called, so thanks for letting me know that. I also tried the recipe in shallow, deep and air fry. While deep fry was better than shallow fry, air fry did not taste great. It doesn’t give the crisp we get from oil fry. With that being said, it did not use much oil, so that’s one good thing.
Thank you very much.❤️😍🙏. No, I don't discard oil after the first fry. Technically, used oil are tested with a special tester tool called "Testo 270" ( Its very expensive, ~INR.40000) The reading of the tool should not exceed 25 TPM or TPC ( Total Polar Material / Compound ) as per the latest FSSAI norm. There used to be an other manual method to check the quality of oil, called "Visibility Test". There is a dip rod with marking ( Inch / cm). The rod is longer version of traditional bill stand kept on the cashier counter of hotels / restaurants. Based on the visibility at certain marking, the quality of oil is judged and reused till the visibility ( of the disk of the bill holder ) is lost. At home, after the cooking, we use kitchen tissue to filter the oil. This removes colour, sediments and carbon particles from oil. We re-use it for cooking.
Hello brother , i want you to read this comment. Am a person with zero interest in cooking. My husband is a foodie. I never could able to satisfy his taste buds. But this one I did like restaurant. Am jumping now.
@@gunaselvanathan2367 Oil quality is measured by a tool called testo meter and the acceptable measure is less than 25 TPM. This measure will be reached after 2 to 3 rounds of fry.

Why should we use maida?
To form a layer around the chicken to protect the meat from the the direct contact of hot oil.
