I prefer Homestead tomatoes because that's what we grew up growing & eating. We peel, slice and let them sit in the fridge until ice cold then sprinkle on some salt and eat 'em up! We live in Texas so when the tomatoes start growing, we have an abundance and can't eat them fast enough or give them away so im definitely saving this recipe!!!! We also eat watermelon with salt and blackberries in a bowl with sugar and milk. 😁
I made this soup at midnight bc it was too easy and delicious looking not to! My mother had given me the most beautiful, bruised and beaten tomatoes. They were perfect. I loved them! The garlic was soooo good too!!! ❤

thanks for following through and updating the recipe to include garlic cooking time, i never would have thought those thin ass slices would take 8 minutes to crisp up.
Our yard will soon be overrun by big tomatoes and I sure know what I'm doing with the first batch! We do have itty bitty spoon tomatoes (highly recommend, they're pea sized) coming in hot but you can't make soup with those - you gotta just stand by the vine and have yourself a moment of joy with a lil pop of summer flavor 😎

I have no doubt this would be great with canned tomatoes as well. A lot bettter than using those underripe romas you find at every grocery store. And no need to strain them.
again im blown away by her cavalier use of fresh basil. those 2 stalks would at least $15-20 worth here in canada. i would never be able to bring myself to pull it out and trash it. i dont see why you cant blend it up in the sauce. xoxox
