If it can be poached, then i imagine it could work! Asian pears seem more fibrous so the consistency may be different. It would be a fun experiment to attempt this and possibly try different ingredients
One of my favorite desserts. I reduce the sauce until it is more syrupy, and serve over goat milk ice cream. Amazing flavor.

Generally speaking, red wine vinegar was red wine which gone "bad", turned sour.... I doubt it could be used as equal.
