If you don't pitch your yeast, it may not start fermentation because your mash may not be warm enough to activate the yeast. It also speeds up the fermentation process.

I see some folks talking about "going blind" from this brew. As I understand it what would cause blindness would be consuming "denatured" alcohol (rubbing alcohol), or wood alcohol, which this mixture isn't. True, this isn't Vodka, which has to be distilled for a more concentrated APV. Heads and tails are accurate, but you're not going to have those "concentrations" with this stuff, just a fortified alcohol as you might find in something like Kahlua, or other cordial. This would be something to use as a "base" to make your own favorite Kahlua, Galliano, Lemoncello, Midori, etc. They just wouldn't have the same APV as the store bought, but would still give you a buzz. One of the classic fears that spring to most peoples' minds when the subject of amateur distillation comes up is that of going blind, or even dying, but this is a myth. Blindness, in this context, is caused by drinking methyl alcohol (i.e. wood alcohol). Anyone who ever went blind from drinking illicit liquor did so by drinking concoctions that were heavily adulterated with store-bought wood alcohol. Actually your right this is not vodka, but your wrong about one thing, if this mixture is distilled at the wrong temp it will make methanol("wood alcohol" which is what is added to denatured alcohol to make it non drinkable)to low a distilling temp you get methanol, around 155 deg.F(non drinkable)the right temp you get ethanol, around 177 deg.F to 180 deg.F(drinkable)much hotter than than and you scorch it( then tastes like crap)now you have shine to make it vodka it then needs to be ran through several active carbon filters.Just a note they use the low temp distilling process to make methanol fuel from corn.

Agreed. You could put this in the freezer and skim off the ice that forms and get it up to about 30 proof. Be a weak vodka, but at least it would be more true to the name. They also make flavorings that will make it taste like peach schnapps, or other liquors. Filter it through a charcoal filter first to reduce the hangover potential.
OK, where do you get the high(96%) alcohol? You cannot ferment anything much over 25% as the alcohol kills off the yeast. The only way you get an alcohol content higher is to distill it.

Yeah, the stuff you talking about is called Samogonka, typically pale white with a bit of a faulty smell and is usually very strong(50-60% alc/vol). Plywood produces methyl alcohols and will cause blindness/death very fast if ingested, the antidote to it is actually ethanol (drinking alcohol). And yes there were a lot of cases in Russia of consuming it...especially when the Royal Everclear (95% abv) was popular during the perestroika era.
What you have here is a 18% abv vodka wash ready for distilling. If you do not want to distill, just think of it as a diluted vodka, like if you leave ice cubes melt in the vodka and then drink it.

I'm pretty sure this ' vodka ' won't be stronger than maximum 14 percent, as any higher would kill the yeast. You would need to distill it to get to actual vodka percents.
bakers yeast ferments to about 5-6 percent and there are lots of different yeasts that ferment from 5-24%. His specific yeast is tolerant of no more than 20%ABV

I'm debating on trying to make my own, following step by step.. read about other processes with air lock seals and juice. What would I use to cover this? saran wrap? and poke a hole or two for the co2 to get out?
blitzcarn I would taste it but I can't say if I'd drink it or not. The only flavour it would have in it would be the yeast you use. A lot of people that want to see if they're interested in homebrew typically go and get a gallon of juice and a water balloon. If you want to try it out for yourself get a gallon of juice get it home poor off just enough to leave a couple inches of room for the must(wine before it's fermented) to ferment put about a cup of sugar in the juice and a packet of yeast give it a shake put a balloon over the top and poke a hole in the bulbous part with a pin. This will let co2 escape and keep bacteria and other crap out of it. Within about 7 days you should have something drinkable(when the balloon deflates). It's fun to watch your creation ferment away. If you're still interested look around town for a home brew store and ask them some questions. It's pretty cheap to start off homebrewing. I think I paid around $70 for everything and about $50 for the honey I used in my first 5gal batch which is still fermenting away nicely. :) Check out craigtube and newtohomebrew tom Craig has a video called inmate brew which is a video for what I just said to do with the juice and both of them have quite a few brew videos to check out.

Jeff, I think we would all be clearer on the subject if we called what you get by distilling a sugar wash "neutral spirit". That is how commercial / industrial distillers term it. If you are running a pot still, you can take the "hearts" fraction and that will be reasonably free of undesirable compounds. If you have a fractionating column it's possible to extract up to 96% (remainder water) pure ethanol. Once you have substantially pure ethanol (+ various amounts of water) you can add any flavour you want to it . Using activated charcoal for purification is a way of cleaning up the spirit if your distillation process isn't very precise. By the way, fermenting a wash containing fruit is about the only way that you can create a small amount of methanol in the product. You can't make methanol if you ferment only sugar.
Let's get some things straight here: 1) This is not wodka, rum or moonsine! This is just a mash that's been fermenting for a week or so. 2) I wouldn't drink the mash if I where you, distill it and you got %60 moonshine (could be a bit less, give or take) + FYI: traditional moonshine would be made with corn(meal)

this is only the fermentation proces. and with a turbo yeast, like the used alcotec 48, you could reach 15 to 18% in about a week. after that, you will have to distil your 'wine' (2 or 3 times) to get a wodka. and it can be even better than the stuff you buy at the store.

Mix it will some Home brewed Hard Cider and its enough to give you a buzz. Booze last month went through the roof here in Ireland with the minimum pricing law. You cant buy any cheap vodka/whisky etc for less than €24($28) per 750ML. So if i can make home booze that is more or less palatable and at a fraction of the cost .. ill do it.

Ok let me clarify, vodka is essentially 40% ethanol and 60% water. Most marketed vodkas have trace impurities, but if you distill fermented grain or fermented sugar it really does not matter. The distillation process separates ethanol with some water and impurities. Further distillation further concentrates the ethanol. Then it can be diluted to 40%. There is no difference between ethanol made from grain and ethanol made sugar. At the end of the day ethanol is ethanol.

The air lock is needed not for bacteria but to produce more product. The yeast feed off of air in a normal environment but to make alcohol you need to starve the yeast of oxygen. At this point the yeast will adapt to the environment by converting the sugar into CO2 and alcohol. If you do not airlock and leave exposed to oxygen it doesn't starve all of the yeast and the yeast will produce less product. The alcohol distillation does not kill bacteria.
Very true I make my own Vodka with sugar water and yeast. Then put it through a T500 still. Wonderfull stuff costs about €1.50. A bottle €2.00 a liter.
That is only true if not all of the sugar is consumed by the yeast during fermentation and you drink it as is. If you distill it to actually make vodka then it shouldn't taste sweet at all.

I do this with brown sugar and Molasses , They are readily available at the dollar store at the same price. It'll be rum at the end . Vodka with white beet sugar or Corn Sugar, or dextrose, is used as a fresh ferment-able sugar Its Ok . Most accidents happen in distilling with dirty lines or lead in lines. I simply use compression fitting and a system that I can break down and wash The compression lines add temp zones and make it easy to measure . This is not wood alcohol , Like some say , wood alcohol is what it sounds like scrap materials suck and corn stalks wood and grass fermented with an acid to break down the long strain sugars .
Um... You don't make vodka off of stray sugar. You make it off of starch from cereal or root vegs which you then convert into sugars. Then the sugars ferment and you get alcohol. However, vodka implies you burn it and gather the vaporized alcohol.
I noticed from the video, it was foot vodka. I would boil the water to kill any bacteria or molds and yeast, cool it to pitching temperature. pitch yeast, cover tightly with an air lock, wait for the fermentation to stop, the distill in a reflux still. There is a unwritten rule, wear shoes when brewing. most importantly cleanliness is everything unless you want methanol and formaldehyde and other bad alcohols. If done correctly, you should get 96%+ in first run. dilute with distilled water.

the alcohol percentage is equal to the amount of sugar you use as to the amount of water. Sugar is what gives you the alcohol. Too much water and you reduce alcohol you end up with, simple.

ALL fermentations will have a small amount of methanol. but even with a shody distillation, you would have to drink a couple of gallons in a short time, to get a harmfull dose of methanol. heck, there is more methanol in the booze you can buy in the store, than there is in most of the homemade stuff. a dedicated home distiller discards more heads (methanol) than most of the industrial distillers.

this won't give you vodka, this will give you a 20% brew at most. In order for a stronger drink you must distill this brew and add more liquid to lower the alcohol percentage in a volume. (unless you want to drink 80%+ ethanol ;) )
This is correct. I made many batches in my youth, and his formula is correct. However, when the mash stops bubbling, then come the fun part of distillation. And the other thing, is that if one is caught selling it without a Federal license, they are facing a felony charge. Ask some of the old moonshiners from back in the day.

dang i i always took a 10 lb bag of spuds and ran em threw a hand crank meat grinder and 3 packets of bakers yeast and 25 pounds of sugar . held my yeast till the end and cooked my spuds till all it was was starch . then added sugar when mash tempt was down to 70 degs added yeast and this was all with a 40 gallon stanless pot , and what wasent cooked by boiling the yeast cooked , then ran it still came out with 160 prf or higher . mix it with creamed crorn for a kick .

No, Vodka is made from potatoes. It is also distilled differently than most other spirits (or is in most cases). What this guy made is not a Vodka, plain and simple. It's also not distilled yet, so in reality it's still mash (or whatever you would call fermented sugar water).
No, there is none of that in vodka, especially not glucose (sugar) it is indeed distilled to ethanol and then diluted to about 40% ABV. Also almost all vodkas are fermented grain originally.

40 degrees is wrong, the water is supposed to be 40 degrees before you add the sugar, after adding sugar it will be around 25 degrees. The upper temp limit is 32. I use an airlock but if you can get by without it, why not. I find cleanliness is key with this kind of brewing, making a completely odourless and tasteless alcohol is the goal. For the record, this isn't vodka either, it's neutral alcohol.
I know this is a terrible video, but I have to point out that only a minority of vodkas are made from potatoes, most of them are made from grains. They can also be made from fruits and sugar, yes, even sugar. The idea is that no matter what product you're using, it has to contain sugar to ferment; and then this is distilled to a very high alcohol content, so almost no flavour other than ethanol is left. That's why technically vodka can be made from anything.
If by sugar you mean Potatoes and by Vodka you mean sugar wine, then yea its home made vodka..............unless of course you want to make real vodka, then you need potato mash in your wort, and you need to distill the fermented product to proper vodka proof and clarity

actually, with proper distilling, it will become a vodka. there's no official standard for vodka, it just needs to be to be a neutral spirit. to accomplish this, it goes through multiple distilling cycles to remove any anything else other than water and ethanol, then you dilute it with distilled water.
It's the methanol that can kill and blind you and its almost impossible to produce a lethal amount of methanol rich ethanol from distilling a sugar mash, you will die of alcohol poisoning before you get blind and he is clearly not distilling anything in this video.... What he shows in the video is how to make a sugar mash, this mash wo'nt get any higher than ca 22% vol becouse the yeast will die and it will taste horrible but it will get you drunk if you're looking for a easy and cheap buzz! You have to really, REALLY screw up badly to produce poison that you're talking about. Cast off the first 2 percent of your distillate and you're safe. The potential danger of methanol poisoning is woefully misunderstood. It was the addition of methanol and other bad alcohol derivatives that harmed people 100 years ago. It's easy to distill safely.

Common misconception that vodka is made from potatoes. Vodka is unlike Brandy or Whiskey, in that you're NOT trying to get flavours from the original mash. You're fermenting something and trying to get as close to 100% ethanol as possible, and then watering it down to desired gravity. With grain specific spirits (such as Whiskey), you're trying more for 85% purity, to keep some desirable impurities, such as a peated smell. Vodka most certainly can be made by distilling fermented sugar water.
This is an improvised process of homemade vodka or gin, It is dranked in some ME countries where alcohol is banned for public use, I tell you that this is really strong its about 80% proof, If you drink this a lot it will mess up your eye nerves and gives you a very bad vision later on, Since it doesn't went thru a real distillery plants to make it smooth and perfected for consumers---This kind of vodka is what they called "friend" vodka and highly criminalized in the ME, It is a very strong and dangerous drink for regular consumption and to those who have a very low tolerance to alcohol poisoning and you could wind up in a hospital in the morning---So drink at your own risk guys its your ass not his.

You put yeast in a jar with warm water and sugar mostly to make sure it is active before putting it in your mash

One of the classic fears that spring to most peoples' minds when the subject of amateur distillation comes up is that of going blind, or even dying, but this is a myth. Blindness, in this context, is caused by drinking methyl alcohol (i.e. wood alcohol). Anyone who ever went blind from drinking illicit liquor did so by drinking concoctions that were heavily adulterated with store-bought wood alcohol. There's a tendency for people to think that any mention of illicit liquor is referring to a product of illicit distillation. Many such illicit liquors are concocted by mixing ingredients from someone's garage or basement and are not produced by fermentation or distillation.
Although a trace amount of methyl alcohol is produced by fermentation, it does not occur at a concentration capable of poisoning an individual. In fact, such trace amounts of methyl alcohol are removed from spirits by distillation, but remain in undistilled beverages like beer and wine. The truth is, there is very very little methyl alcohol produced by fermentation, so it poses no threat to consumers of beer or wine where it remains in solution, or to consumers of distilled spirits where it has been removed. And, in the event of poor distillation practices where it may not be completely removed, it still poses no more threat than it does in beer or wine where it's not removed at all. Doesn't anyone think about doing some research on line before posting silly comments? I guess not, as there seem to be no lack of them here.
Actually your right this is not vodka, but your wrong about one thing, if this mixture is distilled at the wrong temp it will make methanol("wood alcohol" which is what is added to denatured alcohol to make it non drinkable)to low a distilling temp you get methanol, around 155 deg.F(non drinkable)the right temp you get ethanol, around 177 deg.F to 180 deg.F(drinkable)much hotter than than and you scorch it( then tastes like crap)now you have shine to make it vodka it then needs to be ran through several active carbon filters.Just a note they use the low temp distilling process to make methanol fuel from corn.

They also make flavorings that will make it taste like peach schnapps, or other liquors. Filter it through a charcoal filter first to reduce the hangover potential.

OK, where do you get the high(96%) alcohol? You cannot ferment anything much over 25% as the alcohol kills off the yeast. The only way you get an alcohol content higher is to distill it.

Yeah, the stuff you talking about is called Samogonka, typically pale white with a bit of a faulty smell and is usually very strong(50-60% alc/vol). Plywood produces methyl alcohols and will cause blindness/death very fast if ingested, the antidote to it is actually ethanol (drinking alcohol). And yes there were a lot of cases in Russia of consuming it...especially when the Royal Everclear (95% abv) was popular during the perestroika era.

What you have here is a 18% abv vodka wash ready for distilling. If you do not want to distill, just think of it as a diluted vodka, like if you leave ice cubes melt in the vodka and then drink it.

I'm pretty sure this ' vodka ' won't be stronger than maximum 14 percent, as any higher would kill the yeast. You would need to distill it to get to actual vodka percents.
bakers yeast ferments to about 5-6 percent and there are lots of different yeasts that ferment from 5-24%. His specific yeast is tolerant of no more than 20%ABV

I'm debating on trying to make my own, following step by step.. read about other processes with air lock seals and juice. What would I use to cover this? saran wrap? and poke a hole or two for the co2 to get out?

blitzcarn I would taste it but I can't say if I'd drink it or not. The only flavour it would have in it would be the yeast you use. A lot of people that want to see if they're interested in homebrew typically go and get a gallon of juice and a water balloon. If you want to try it out for yourself get a gallon of juice get it home poor off just enough to leave a couple inches of room for the must(wine before it's fermented) to ferment put about a cup of sugar in the juice and a packet of yeast give it a shake put a balloon over the top and poke a hole in the bulbous part with a pin. This will let co2 escape and keep bacteria and other crap out of it. Within about 7 days you should have something drinkable(when the balloon deflates). It's fun to watch your creation ferment away. If you're still interested look around town for a home brew store and ask them some questions. It's pretty cheap to start off homebrewing. I think I paid around $70 for everything and about $50 for the honey I used in my first 5gal batch which is still fermenting away nicely. :) Check out craigtube and newtohomebrew tom Craig has a video called inmate brew which is a video for what I just said to do with the juice and both of them have quite a few brew videos to check out.

To progress to a spirit you need to distil and use a purification process to remove undesirable by-products. Vodka is made from grain or potatoes as the fermentable material, not household sugar.

Jeff, I think we would all be clearer on the subject if we called what you get by distilling a sugar wash "neutral spirit". That is how commercial / industrial distillers term it. If you are running a pot still, you can take the "hearts" fraction and that will be reasonably free of undesirable compounds. If you have a fractionating column it's possible to extract up to 96% (remainder water) pure ethanol. Once you have substantially pure ethanol (+ various amounts of water) you can add any flavour you want to it . Using activated charcoal for purification is a way of cleaning up the spirit if your distillation process isn't very precise. By the way, fermenting a wash containing fruit is about the only way that you can create a small amount of methanol in the product. You can't make methanol if you ferment only sugar.

Mix it will some Home brewed Hard Cider and its enough to give you a buzz. Booze last month went through the roof here in Ireland with the minimum pricing law. You cant buy any cheap vodka/whisky etc for less than €24($28) per 750ML. So if i can make home booze that is more or less palatable and at a fraction of the cost .. ill do it.

Ok let me clarify, vodka is essentially 40% ethanol and 60% water. Most marketed vodkas have trace impurities, but if you distill fermented grain or fermented sugar it really does not matter. The distillation process separates ethanol with some water and impurities. Further distillation further concentrates the ethanol. Then it can be diluted to 40%. There is no difference between ethanol made from grain and ethanol made sugar. At the end of the day ethanol is ethanol.

The air lock is needed not for bacteria but to produce more product. The yeast feed off of air in a normal environment but to make alcohol you need to starve the yeast of oxygen. At this point the yeast will adapt to the environment by converting the sugar into CO2 and alcohol. If you do not airlock and leave exposed to oxygen it doesn't starve all of the yeast and the yeast will produce less product. The alcohol distillation does not kill bacteria.

Very true I make my own Vodka with sugar water and yeast. Then put it through a T500 still. Wonderfull stuff costs about €1.50. A bottle €2.00 a liter.

That is only true if not all of the sugar is consumed by the yeast during fermentation and you drink it as is. If you distill it to actually make vodka then it shouldn't taste sweet at all.

I do this with brown sugar and Molasses , They are readily available at the dollar store at the same price. It'll be rum at the end . Vodka with white beet sugar or Corn Sugar, or dextrose, is used as a fresh ferment-able sugar Its Ok . Most accidents happen in distilling with dirty lines or lead in lines. I simply use compression fitting and a system that I can break down and wash The compression lines add temp zones and make it easy to measure . This is not wood alcohol , Like some say , wood alcohol is what it sounds like scrap materials suck and corn stalks wood and grass fermented with an acid to break down the long strain sugars .
Um... You don't make vodka off of stray sugar. You make it off of starch from cereal or root vegs which you then convert into sugars. Then the sugars ferment and you get alcohol. However, vodka implies you burn it and gather the vaporized alcohol.

I would boil the water to kill any bacteria or molds and yeast, cool it to pitching temperature. pitch yeast, cover tightly with an air lock, wait for the fermentation to stop, the distill in a reflux still.
There is a unwritten rule, wear shoes when brewing. most importantly cleanliness is everything unless you want methanol and formaldehyde and other bad alcohols. If done correctly, you should get 96%+ in first run. dilute with distilled water.

this won't give you vodka, this will give you a 20% brew at most. In order for a stronger drink you must distill this brew and add more liquid to lower the alcohol percentage in a volume. (unless you want to drink 80%+ ethanol ;) )
This is correct. I made many batches in my youth, and his formula is correct. However, when the mash stops bubbling, then come the fun part of distillation. And the other thing, is that if one is caught selling it without a Federal license, they are facing a felony charge. Ask some of the old moonshiners from back in the day.

This video is simply a base mash to make into anything. I age mine to become bourbon with smoking chips from destroyed JD barrels. Some I mix with candies for cinn/hot flavors. But my base sugar-water-yeast is shine, not vodka. And when I use fruits, it's more like a rum or brandy when done.

and 3 packets of bakers yeast and 25 pounds of sugar . held my yeast till the end and cooked my spuds till all it was was starch . then added sugar when mash tempt was down to 70 degs added yeast and this was all with a 40 gallon stanless pot , and what wasent cooked by boiling the yeast cooked , then ran it still came out with 160 prf or higher . mix it with creamed crorn for a kick .

No, there is none of that in vodka, especially not glucose (sugar) it is indeed distilled to ethanol and then diluted to about 40% ABV. Also almost all vodkas are fermented grain originally.

Vodka is just alcohol and water. You can make vodka out of anything that has alcohol in it with enough distillation.
40 degrees is wrong, the water is supposed to be 40 degrees before you add the sugar, after adding sugar it will be around 25 degrees.
The upper temp limit is 32.
I use an airlock but if you can get by without it, why not.
I find cleanliness is key with this kind of brewing, making a completely odourless and tasteless alcohol is the goal.

I know this is a terrible video, but I have to point out that only a minority of vodkas are made from potatoes, most of them are made from grains. They can also be made from fruits and sugar, yes, even sugar. The idea is that no matter what product you're using, it has to contain sugar to ferment; and then this is distilled to a very high alcohol content, so almost no flavour other than ethanol is left. That's why technically vodka can be made from anything.

actually, with proper distilling, it will become a vodka. there's no official standard for vodka, it just needs to be to be a neutral spirit. to accomplish this, it goes through multiple distilling cycles to remove any anything else other than water and ethanol, then you dilute it with distilled water.

The title is Home Made Vodka. Vodka is distilled. This 'drain cleaner' is not distilled.
It's the methanol that can kill and blind you and its almost impossible to produce a lethal amount of methanol rich ethanol from distilling a sugar mash, you will die of alcohol poisoning before you get blind and he is clearly not distilling anything in this video.... What he shows in the video is how to make a sugar mash, this mash wo'nt get any higher than ca 22% vol becouse the yeast will die and it will taste horrible but it will get you drunk if you're looking for a easy and cheap buzz! And btw... vodka is made out of potatoes and/or grains etc :) if you distill this you get some decent moonshine
You have to really, REALLY screw up badly to produce poison that you're talking about. Cast off the first 2 percent of your distillate and you're safe. The potential danger of methanol poisoning is woefully misunderstood. It was the addition of methanol and other bad alcohol derivatives that harmed people 100 years ago. It's easy to distill safely.
actually a wash is vodka. moonshine is just amateur vodka. good vodka is made from potatos but can be made from fruits as well. but I agree that it is not vodka until it is distilled

Common misconception that vodka is made from potatoes. Vodka is unlike Brandy or Whiskey, in that you're NOT trying to get flavours from the original mash. You're fermenting something and trying to get as close to 100% ethanol as possible, and then watering it down to desired gravity. With grain specific spirits (such as Whiskey), you're trying more for 85% purity, to keep some desirable impurities, such as a peated smell. Vodka most certainly can be made by distilling fermented sugar water.
This is an improvised process of homemade vodka or gin, It is dranked in some ME countries where alcohol is banned for public use, I tell you that this is really strong its about 80% proof, If you drink this a lot it will mess up your eye nerves and gives you a very bad vision later on, Since it doesn't went thru a real distillery plants to make it smooth and perfected for consumers---This kind of vodka is what they called "friend" vodka and highly criminalized in the ME, It is a very strong and dangerous drink for regular consumption and to those who have a very low tolerance to alcohol poisoning and you could wind up in a hospital in the morning---So drink at your own risk guys its your ass not his.
