Brisket on the Rec Tec RT-590! Porter Road! Postal BBQ Mad Cow Rub!

- Combined low and slow with a little hot and fast to finish this amazing brisket from Porter Road! Jabin’s Mad Cow is a great rub!
• Started with a 14 pound brisket from Porter Road.
• Used Postal Barbecue’s Mad Cow Rub and coated generously.
• Set up the Rec Tec 590 on the extreme smoke setting.
• Ran it one hour on extreme, turned it up to 225 for another hour and then turned it to 250 until it reached 160.
• Once it reached about 160 degrees. At this point I wrapped it and added beef broth and tried to wrap as tight as I could without losing any broth.
• When it got to 198 I started to check it. Once it got to 202 it was probe tender.
• Opened up the foil for 5 to 10 minutes to let the bark dry up some.
• Let it rest for about 1 hour 30 minutes before cutting into it.
• Saved the Au Jus in my fat separator to add as we eat the brisket!
Summary: This was a fantastic brisket and would do this exactly the same way next time. Postal Barbeque Mad Cow is a great flavor and a must try. This had such a nice flavor and the Au Jus that was left over was incredible.

Thanks for watching and appreciate the comments! Since we are a 2 man team, these are harder for us to video because of the time it takes. Jack usually will come to may house for the beginning and then he comes back for when we get to around 160F for the wrapping and will stay to the end. We do utilize our time well and will shoot something else while we wait for the brisket! Cheers!

The weekend has started and 3 grills running tonight, chicken breast, venison sausage for the freezer, corn on the cob and a nice ham steak for dinner! Tomorrow we smoke bacon and Canadian bacon! Holy Cow. That looks terrific. One of the reasons I bought a pellet grill was with cooking brisket in mind. I’ve only done two or three on the pellet grill. Still use the KJ. Pellet grill does great and of course holds temp steady for hours and hours but to me KJ still puts a better flavor on it. Don’t be hoarding the point there Craig. 😏

Really love your filming style and the way you set up your description page. You don't waste our time with minutes of watching you shake on dry rub etal. Your speaking style is great. Yes, this one was excellent! I forgot to mention about the Au Jus, but at the end of the video, you can see the amazing juice in the fat separator! I have been doing the aluminum pan for years and I also do it with pulled pork! I know the fad is butcher paper, but I hate wasting that good juice! Cheers!

Where's the extreme smoke setting???
That was the lowest setting, I believe it is around 180F degrees. I thought when I first got the grill, that setting was on the app? Cheers!
How is the 590 still working for you at this point? I think you have had it quite a while now. I'm considering buying one and I am looking to see if current owners are still 100% happy with theirs.....

I'm torn between this and the kamado joe for smoking.
That is a tough one. I would probably stick with my KJ. You can do everything that the Rec Tec can do, but also sears at higher temps and you will get more smoke flavor on the KJ. If you want much easier control, the Rec Tec is the way to go. If you do a lot of quick cooks, again Rec Tec will work for that! If you go with the KJ, once you understand how to get the temps you want, it is pretty easy as well, but it will take much longer to get to temperature then the Rec Tec. Hope that helped? Cheers!

Yes, I am really happy with the 590, it works for me. The advice I have given is depends on your needs, for me as you know, I have a bunch of grills, so no need for more real estate for me. If you only have one or two grills, you may want the extra space with the 700 or 1250. If you are trying to rationalize the size of the 590 and debating on the size, go bigger! I did get 2 of the extender racks and now I can do 20 lbs of bacon, just did 10 lbs of chicken breast and have done 3 racks of ribs, without the extender racks! Just my opinion! hope that helps! does the rt 590 take long to get up to temp. have a 1250 now but want something smaller for sides. also great looking brisket!
I typically only use the Rec Tec pellets and I think I get to temp on this pretty quick. Of course weather can change that, we are in PA and have some cold winters and then it will take longer. What’s the biggest brisket you think you could fit on the 590?
This was a 14 lb brisket, I would think you could easily do a 19+ on hear. I never had one that didn’t fit easily. Cheers!
What size pan did you have underneath as a drip pan. That is nice.
I got them on Amazon and I was going to send you the link, but they were unavailable. Here is the description: 20 Pack 1/2 Cookie Sheet Baking Cake Pans l 17.7” x 13” Disposable Aluminum Foil Trays. They do have some similar items, but this should give you a starting point. The 590 does a nice job with grease management, but these help with cleanup! The also fit in the Rec Tec 380 and you need a drip pan in that grill. Thanks for watching! Cheers!

Thanks for watching Joey! I actually did extreme smoke for the 1st hour and then turned to 225 for the next hour and then 250 until it got to 160 and the bark was set. Why didn’t you use butchers paper
I like to use foil when I wrap so I can save that great Au Jus! I didn’t mention it at the end, but if you see that amazing liquid I had in the fat separator at the end is the main reason I use foil! Just my preference! Appreciate you watching! Cheers!
