I've usually taken the train from Daegu to Incheon. Sometimes the KTX all the way and sometimes KTX to Seoul and then airport Express subway. Maybe you had too much luggage?
They stopped a direct KTX train to the airport a while ago (pre-covid times), but I don't know why. And we had too much luggage to make the KTX + airport train feasible. We also had an early flight and the trains don't run overnight so it would have been a tight schedule to get to the airport in the morning.

I don’t eat red meat. Do you get an option on types of meal, i.e. chicken or beef, in flight? I see you can select a special menu pre-flight but don’t want to be restricted to seafood or vegetarian only. Thanks!
There's always at least 2 options and I believe the main meal has three options to choose from. Depending on the flight, I think there's always a non-red meat option like chicken or fish. Fyi, the bibimbap has a little bit of minced beef in it. I never selected special meals preflight before, but maybe there are more options? I hope that helps 🙂
We got ours at a health clinic in Daegu. There are lots of places to get PCR tested. I found the easiest way to find the list of places to get tested at the COVID section of Korean Air's website.
Korean Air and I believe Asiana Airlines flights in and out of Korea always have bibimbap for one of the their inflight meals, and it's always guarantee to be good. 👍

I hope my answer is not too late. If you're flying to the US then you just need to bring the official papers that prove you are negative at check-in.
