China is similar to Europe, there is this North-South divide in almost everything, southern Europe having better food and being shorter compared to the north.

Wow, so good to hear about China North / South differences. I will be going to Shandong soon…assuming that is the North. I was worried that it may be too cold in the winter. But good to hear the North is dry sodry cold is comfortable if there is more sunshine. I dob’t care for humidity. Glad to hear abput the baths and saunas…up my alley. I don’t mind being naked, as i do go to lots of natural hot springs pools in the US .
Just imagine the difference between northern China to the diaspora in the deep south, south like southeast Asia, here the weather is brutally hot and humid and the wet season is torrential! our skin and health is not as good as in southern China due to the excessive humidity and UV, our food is more varied and robust due to local influences as well as European influences due to colonialism but more or less it is originally very close to southern Chinese cuisine, now there are a lot of Sichuan flavours/northern cuisine coming in, we also tend to eat more dairy like cheese and also more types of spices, we are generally even shorter than southern Chinese and most of us are losing the ability to speak any Chinese type languages and instead most especially the young are Anglophones. Not to mention our etiquette is closer to Europeans/Americans than to Mainland China and there is heavy influence by Korea and Japan here especially in the cities.
I heard that Northerners, DNA-wise have admixture of central and northern Asians where as Southerners have more in common with their indo-china neighbours like Vietnam and Thailand and more austronesian dna.
IDK about he difference between North and South when the majority are speaking of only Beijing and Shanghai. Anyways, it’s like comparing LA’s chill vibe to NY’s hustle.

I like southern Chinese food though as a foreigner

Northern food is not my taste though
because most of the chinese food you're exposed to in the west come from southern china so these flavors and foods are more familiar.
