    I once ate 5lbs of mashed potatoes. It was glorious. Actually it was 5lbs of potatoes but with the butter and infused milk likely closer to 6 or 7.

      Not a bad way to make mash. If you want to take it a step further, put it for 20-25 minuites in water, then when you mash it it doesn’t crumble and has a better consistency, then as a slash of butter and/or milk, it’s great in bulk so you don’t have to do it often but improves the taste a lot, and you don’t have to feel like you’re eating pure butter vomit.

    recently ive been making a guizhou region inspired mashed potato.
    plenty of garlic, onion, chili, and the secret special ingredient, fermented black soybean (douchi).
    super tasty.

    For ultimate top tier level 4 mash. Follow #3 upto and including the ricer. Then throw that away, take the butter add salt, and eat that. Cost me 20k in Paris but I now know their secret.

    Just my personal preference but a more solid consistency similar to the inside of a baked potato is much more delicious. Also adding just a little mustard to the mixture takes it to the next level.

    I don’t really like lumpy mash personally as I have a texture problem with food like bits of fruit in yogurt but I will say these look to creamy and soft I do prefer them to be more airy light and fluffy cloud like but I bet they still taste grate ❤

      And I thought an 'expert' like him would put nutmeg in - at least - the last version. When I learnt to make mashed potatoes as a child, it used to have butter, milk, salt and lots of ground nutmeg in it as a standard. Various herbs were optional and depended on what the other parts of the meal were.

      Yes, my God. I constantly see mashed potato recipes where they completely overwork the potato, add way too much liquid, and make it a paste.
      Literally just mash till there's a few lumps scattered about, and stir in butter, milk, and seasoning.

    My usual recipe is between Intermediate and Pro: roasted potatoes, pressed through a ricer, and mixed with cream, butter, ground mustard, and enough roasted-and-mashed garlic to vampire-proof the entire house. Packed into a ramekin, topped with parm, and torched 'til melty and mouth-watering.

    You should heat your milk/cream with aromats like garlic, black pepper, garlic, thyme/rosemary first and strain it adding the hot liquid in the mash.

    Does anybody else prefer less buttery dry mash? I think its better for most of the things you have mash with, stew, bangers with gravy, they are all very wet and adding super buttery mash just makes a plate of mush, not for me

    It’s funny to see how deep the misinformation goes as far as butter is concerned - He said in regard to the French style “It’s worth blocking your arteries over” presumably because it has a lot of butter in it. France has one of the lowest levels of heart disease in the world, and one of the highest consumptions of animal fat. Butter is good for you. Vegetable oil is not.
